Why this Recipe Works

The idea for this cherry ice cream actually came from my long-standing plan to make amarena cherry ice cream. While I love the flavor, amarena cherries can be difficult to find. As I was thinking through different ice cream recipes, I realized one of my favorite desserts – a classic cherry cheesecake – would be just as amazing in frozen form. And I have to say, it turned out absolutely delicious!

Ingredients for Cherry Cheesecake Ice Cream

To make this delicious cherry cheesecake inspired ice cream, you’ll need the following ingredients:

  • Heavy cream & cream cheese as the base for the ice cream, the cream cheese gives it the real cheesecake vibe
  • Cookies, I like to use either graham crackers or Biscoff, both work wonderfully
  • Cherries, I prefer to use store-bought cherry pie filling
  • Sugar, to add some sweetness
  • Ice cream cones, to serve it in of course!

Ingredients

8 portions
For the ice cream:
  • 500 ml heavy cream
  • 300 gram cream cheese
  • 250 ml whole milk
  • 200 gram sugar
  • 1 tsp vanilla extract
For the cherry filling:
  • 200 gram cherry pie filling
  • 75 gram cookies (graham crackers or Biscoff)

Equipment

INSTRUCTIONS (how to make this recipe):

  • Mix the heavy cream, cream cheese, milk, sugar and vanilla extract together and blend in a blender until smooth.
  • Pour the mixture into an ice cream maker and churn it into a nice ice cream in 45-60 minutes (the time may vary depending on the ice cream maker).
  • Fold the crumbled cookies and the cherry pie filling through the ice cream, keeping a little bit aside.
  • Pour the ice cream into a rectangular baking dish and garnish with the extra cookies.
  • Freeze the ice cream for 3 hours in the freezer, serve and enjoy!
