This ice cream cake is incredibly easy to prepare. In fact, once the ice cream cake is ready, it needs to be put in the freezer for a while to set, at least an hour, but longer is definitely recommended. Overnight is great, but it can be longer.

The best thing about this recipe is that you don’t have to spend a lot of time making it, it freezes well and you don’t take it out until you’re ready to serve it! This gives you more time to spend with your guests, isn’t it? Trust me, all eyes will be on you when you finish your Christmas dinner with this spectacle.

Festive dessert

To make this ice cream dessert, start with the vanilla ice cream and the pound cake. These are layered alternately in a cake tin. I decorated the top of the cake with chocolate chips, macarons, meringues and fresh fruit.

You can get really creative with this ice cream cake, for example add different fruits or ice creams of your choice and go wild with the decorations. Ingredients

10 pieces
  • 1 pound cake
  • 500 gram vanilla ice cream (slightly thawed)
  • 150 gram fresh raspberries
  • 100 gram chocolate chips
  • powdered sugar
  • meringues, macarons, chocolate and fresh fruit

Equipment

  • Cake tin
  • Cling film

INSTRUCTIONS (how to make this recipe):

  • Slice a cake horizontally into 3 long slices.
  • Cover a cake tin with cling film and place 1 slice of cake in the tin.
  • Spread half the ice cream on top, followed by some fresh raspberries and some chocolate chips.
  • Place the second slice of cake on top and repeat step 3.
  • Finish with the last slice of cake and place in the freezer for at least an hour to set (longer is fine, so you can make it the day before).
  • Just before serving, place on a platter and garnish with icing sugar, meringue, macarons, chocolate and fruit. Enjoy!
