Chicken shawarma, my one and only guilty pleasure meal inspired by Mediterranean food, Comfort food at its best, perfectly marinated chicken in a homemade shawarma seasoning, a good salad and of course homemade garlic sauce.

Guilty pleasure meal

I love comforting street food dishes from the Mediterranean and Middle East like Greek gyros, döner kebab and of course shawarma. But like many things, it’s just so much tastier when you make it yourself, just like this classic chicken shawarma sandwich. It doesn’t have to be difficult or unhealthy and can still feel like a guilty pleasure dish 😉 .

Making your own shawarma, for example, is pretty easy, especially if you follow my tips. I always use chicken, which stay wonderfully tender and is very easy to season. I prefer to serve it with pita bread or Turkish bread and make a sandwich.

Assemble your sandwich with some fresh veggies like banana peppers, cucumber and tomato slices. I like to add crisp lettuce and a nice sauce like homemade garlic sauce. You can fill your sandwich however you prefer. It’s also great to share with kids, they can assemble their own chicken shawarma sandwiches!

This is such a tasty and easy recipe. You first mix all the ingredients for the marinade and then let the sliced chicken marinate for a nice long time. Preferably at least 1 hour, but you can leave it in the fridge overnight to get the right flavor. The longer, the more flavorful and tender the meat will be!

Homemade chicken shawarma

Next, grill the meat for your shawarma sandwich, I love a stuffed sandwich with lots of fresh vegetables. If you’re going to make the sauce and rolls yourself, I recommend doing it ahead of time so you can get a tasty meal on the table quickly, even on busy nights.

Ingredients

4 sandwiches
For the Shawarma
  • 500 grams of boneless chicken thighs
  • 2 tablespoons of olive oil
  • 2 cloves of garlic (minced)
  • 1 tablespoon of lemon juice
  • 2 teaspoons of smoked paprika powder
  • 1 teaspoon of coriander (ground)
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin (ground)
  • ½ teaspoon of cardamom (ground)
  • ¼ teaspoon of cloves (ground)
  • ¼ teaspoon of cayenne pepper
  • salt and pepper
To serve
  • 4 pita pockets
  • salad
  • vegetables (for example tomato, cucumber, banana peppers)
  • garlic sauce (to taste)

INSTRUCTIONS (how to make this recipe):

  • Mix all the spices, oil, garlic and lemon juice for the shawarma.
  • Cut the chicken into strips.
  • Add the chicken and season with salt and pepper. Let the chicken marinate in the spices, preferably at least 1 hour or longer.
  • Cook the shawarma in a frying pan until done.
  • Divide the shawarma between the sandwiches along with the lettuce of your choice. I personally like to add tomato, cucumber and other raw vegetables.
  • Add a nice dollop of (homemade) garlic sauce to taste and enjoy!
