It’s summer and that means it’s peach season! For this occassion I will share with you my fresh peach ice cream recipe, perfect for a warm summer day. Once you make it yourself you will never go back to store-bought ice cream. Let the sun shine and make some delicious homemade ice cream!

I love peaches! They’re one of my favourite summer fruits. They’re so sweet and juicy! You’ll find lots of peach recipes on the blog. How about a peach cheesecake for example, or a peach galette?

As you can see, there are plenty of options here for peach lovers. If you have a lot of peaches and don’t know what to do with them, these are all great suggestions. But this peach ice cream is especially good — it’s such a delicious combination of creaminess, biscuits, and fresh fruit!

Easy peach ice cream recipe

Making ice cream isn’t difficult. An ice cream maker is recommended because it makes things easier, but it’s not essential. The base of this ice cream is fantastic on its own, and the addition of peach syrup and peach pieces completes it.

Oh, and I almost forgot the pieces of Bastogne biscuit, you can leave them out (but then you’ll be missing out) or use other biscuits. It’s entirely up to you. But the taste of Bastogne biscuit and peach goes very well together.

Best homemade peach ice cream recipe

What makes this ice cream so delicious? The peach syrup! By letting the peaches steep in lemon juice and sugar first, you end up with a delicious syrup to add to the ice cream and the peach chunks have more flavour and are wonderfully soft.

If you don’t have any fresh peaches but really want to make this ice cream, you could use canned peaches instead. It’s not quite the same, of course, but it’s still very tasty!

Peach ice cream

Ingredients

8 portions
For the peach filling/syrup:
  • 5 ripe peaches
  • 4 tbsp brown sugar
  • 1 tbsp lemon juice
For the ice cream:
  • 450 ml heavy cream
  • 250 gram cream cheese
  • 200 ml whole milk
  • 150 gram sugar
  • 1 tsp vanilla extract
  • 75 gram Bastogne biscuits (or other – crumbled)
  • optional: ice cream cones

Equipment

INSTRUCTIONS (how to make this recipe):

  • Peel the peaches, remove the stones and cut them into wedges.
  • Place all the peach wedges in a bowl, add the sugar and lemon juice, and mix well.
  • Leave to stand for about an hour to allow the juices to release.
  • Collect the juice and cut the peaches into small pieces.
  • Mix all the ice cream and syrup ingredients together. The easiest way to do this is in a blender, as this will whip the cream until light and fluffy, giving the ice cream a nice texture.
  • Put the ice cream mixture and half of the chopped peaches into the ice cream maker and churn for 45–60 minutes until the ice cream is ready (the time may vary depending on the ice cream maker).
  • When the ice cream is almost ready, stir in the remaining peach pieces and the crumbled biscuits. Spoon the mixture into a cake tin or baking dish and freeze for another hour or so. Enjoy!
Good to know:
Take the ice cream out of the freezer 20–30 minutes before serving to bring it to room temperature.
