Peach galette, a delicious dessert with sweet, fresh peaches and a flaky pie crust. A delicacy of French cuisine that is incredibly easy and quick to make. Ideal for enjoying the delicious seasonal fresh fruit, and one of my favorites: the peach.

it’s summer and that means; it’s peach season! I can’t get enough of them this summer, and hopefully you can’t either, because this is a big hit. I also like the fact that it is so easy to make. Delicious homemade pie doesn’t have to be complicated, as this easy peach galette proves! It is a rustic dessert and definitely one of my favorite summer desserts!

What is a galette?

You may not know what a galette is. It is a collective name for all kinds of flat, round and/or buttery pies. The filling can be either savory or sweet, but the most famous is the round galette with a fruit filling. Just like this one with a sweet peach filling with peach slices and cardamom.

Although you can certainly vary the type of stone fruit you use. There are so many delicious summer fruits! For example, I made a strawberry galette before, which was also quite fantastic. But I think other fruits would be delicious too. The galette is a great little cake to have with coffee or tea, but also as a dessert, with a scoop of ice cream if you like. 😉

I think this peach galette is the embodiment of summer. The fresh, juicy peaches combined with cardamom, the flaky crust and almond shavings is just delicious. By the way, the pastry is really super easy to make!

You don’t actually need a food processor to make this buttery crust and it’s ready in a jiffy. Just let it rest while you make the filling and you can finish the galette. Place the sliced peaches in the center and fold the edges inward. This doesn’t have to be very neat and can be a bit rustic, which makes it even easier to assemble!

Top tips for galettes

There are a few tricks to make sure the dough doesn’t tear, I’ll give you all the tips in the recipe so you’ll be sure to succeed. I made 3 medium-sized galettes here, but you can also make 1 large peach galette with this recipe. Another great summery dessert is my peach cheesecake, definitely worth trying!

Peach galette

Ingredients

6 people
For the crust
  • 250 grams all-purpose flour
  • 150 grams butter (cold – unsalted)
  • 75 grams sugar
  • 1-2 tbsp cold water
  • pinch of salt
For the filling
  • 8-9 peaches
  • 3 tbsp sugar
  • 3 tbsp instant pudding powder
  • 1 tsp cardamom
  • 1 egg (medium – beaten)
  • 2 tbsp almond flakes

Equipment

  • Food processor
  • Baking sheet
  • Parchment paper
  • Rolling Pin

INSTRUCTIONS (how to make this recipe):

  • Place the flour, butter, and sugar for the crust in a bowl and knead loosely with your hands to form a crumbly dough. You can also pulse it briefly in a food processor.
  • Add a pinch of salt and a little cold water until you have a ball.
  • Place the dough ball in the refrigerator for about half an hour. While the dough is chilling, continue to make the filling.
  • Preheat the oven to 220 degrees Celsius / 430 Fahrenheit top and bottom heat. Make sure the baking sheet is already in the oven so it will be nice and warm to use later.
  • Peel and slice the peaches. Remove the pit. Place the peach slices in a bowl and sprinkle with the sugar, instant pudding powder, and cardamom for the filling.
  • Remove the dough from the refrigerator and divide into 3 equal balls or stick to 1 large ball.
  • Roll into a round piece of dough with a little extra flour so it doesn’t stick to your rolling pin (it may look a little rustic). Add parchment paper to the bottom, if necessary, so that the galette is directly on the parchment paper and won’t stick to the countertop.
  • Spread 1/3 of the peach mixture in the center of each galette.
  • Fold the edges over the filling. If needed, use the parchment paper by folding it over along with the dough. Let the paper do the work for you, since the dough can easily tear.
  • Gently transfer the galette to the warm baking sheet. Brush the edges with the egg wash and add almond flakes to taste.
  • Place the galette(s) in the oven and bake for about 15 minutes until golden brown and cooked through. Allow them to cool a bit before cutting. Enjoy!
