How beautiful is this beet salad? It’s a real treat for the eyes, if you ask me. And not just to look at, mind you, it’s also incredibly delicious. That sweet, earthy beetroot paired with salty feta, spicy arugula, walnuts, and a delicious balsamic dressing. Finger-licking good! A wonderful addition to my salad recipes, don’t you think?

Beet Salad Ingredients
To make this incredible salad you’ll need the following ingredients:
- Arugula: this is what I used for the base of the salad, it’s crisp with a slight kick to it
- Beetroot: I opted for pre-cooked beets, which makes this recipe a really quick one. You can cook or roast the beets yourself if you want!
- Feta cheese: I would recommend picking a sheep’s feta cheese of good quality for this recipe
- Balsamic dressing: which is made with extra virgin olive oil, balsamic vinegar and honey
- Walnuts: for a bit of crunch, you can substitute them with pecans if you want
Beetroot Salad with Goat Cheese
Not a fan of feta or want to try something different? Then you could also make a beet salad with goat cheese. Feta is actually a sheep’s milk cheese and is a bit saltier than goat cheese, but you can easily swap them out! It’s a super summery salad, perfect for a BBQ, for example! Another delicious summer salad is this burrata salad, which is definitely worth trying.

Homemade Beet Salad
Like many of my recipes, this salad is nice and easy to make. You could use pre-cooked beets, so you have even less prep work and can whip up this beet salad in just ten minutes.
Perfect for a last-minute side dish or when you don’t want to keep yourself, or your guests, waiting too long. You can also make the dressing ahead of time – ideal!

This beet salad is a great addition to your summer salad repertoire. Easy, quick, and incredibly flavorful.
