My easy macaroni salad recipe
This salad is definitely one of my favorites. Although a nice light leaf salad is also delicious, I enjoy a well-filled salad with lots of flavor the most! It’s incredibly easy to make and packed with flavor.
This perfect pasta salad consists of, of course, elbow macaroni, bacon, fresh herbs, crunchy veggies such as red bell pepper and simple creamy mayo-based dressing made with Greek yogurt for the ultimate creamy macaroni salad.
Ingrediënts
- 125 grams macaroni
- 100 grams bacon bits
- 75 grams peas (from the freezer – thawed)
- 75 grams corn
- 1 red bell pepper
- ½ cucumber
- 1 tbsp mayonnaise
- 1 tbsp Greek yogurt
- 1 tbsp parsley
- 1 tbsp chives
- pepper and salt
EQUIPMENT:
- Large bowl
INSTRUCTIONS (how to make this recipe):
- Cook macaroni al dente in a pan of hot and salted water, drain and rinse under the cold tap.
- Meanwhile, fry the bacon in a frying pan (without extra oil) and drain on kitchen paper after frying.
- Cut the cucumber and red bell bell pepper into small pieces.
- Put the macaroni in a large bowl with all the rest of the ingredients.
- Season with salt and pepper. Enjoy your meal!
