Ingredients

  • 100 gram arugula
  • 50 ml olive oil (extra virgin)
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 6 beets (medium-sized, cooked and diced)
  • 100 gram sheep's feta (crumbled)
  • 50 gram walnuts (toasted and coarsely chopped)
  • salt and pepper to taste

INSTRUCTIONS (how to make this recipe):

  • Spread the arugula in a large bowl.
  • Mix the olive oil, balsamic vinegar, honey, salt, and pepper to make a dressing.
  • Pour the dressing over the beets and toss everything together.
  • Arrange the beets over the arugula and sprinkle the feta and walnuts on top.
