I make this fresh and creamy cucumber salad recipe with fresh cucumbers, plain Greek yogurt, olive oil, salt, pepper and fresh dill. Super easy, super tasty. By the way, if you don’t like dill in cucumber salad, you can use other fresh herbs.

Simple cucumber salad
The best thing to do is to slice the cucumber really thin. I prefer to do this with a mandoline slicer. A handy tool that makes it a quick and easy job, making sure you have nice and even cucumber slices. It’s not a must though, you can also use a peeler or very sharp knife to make thin slices.

Ingrediënts
- 1 cucumber
- 100 grams Greek yogurt
- 1 tbsp olive oil
- 2 sprigs fresh dill (finely chopped)
- 1 tbsp vinegar
- salt and pepper
EQUIPMENT:
- Mandoline slicer
INSTRUCTIONS (how to make this recipe):
- Cut the cucumber into thin slices (using a mandoline slicer or knife/peeler).
- Place the cucumber in a large bowl and add the remaining ingredients.
- Stir to combine and season with salt and pepper.
- Let sit for a while before serving (preferably an hour in the refrigerator) to allow the flavors to infuse. Enjoy!
