Chewy cranberry cookies with white chocolate, incredibly delicious and indulgent cookies that are easy to make and even easier to devour!
The perfect cookie
I love a good chewy cookie with a crunchy, golden brown edge and soft inside – just the way they should be! These cranberry cookies are precisely that, just perfect. The slight acidity of the cranberries combines wonderfully with the sweetness of the white chocolate chips.
As they say, better safe than sorry. So be warned, before you know it they will all be gone! Give them as gifts over the holidays, or serve them to guests for coffee or tea so you don’t have to eat them all yourself 😉 !
White chocolate cranberry cookies
Sweet and sour is often the perfect flavour combination. Just like these cranberry and white chocolate cookies. By the way, this recipe uses dried cranberries, not fresh! You can usually find dried cranberries in the baking section of the supermarket or in the dried fruit section.
Some of my other favorite cookie recipes are these brown butter chocolate chip cookies and of course, the classic snickerdoodle! And now, I can add these cranberry cookies to my list of favorites.
Ingrediënts
- 125 gram unsalted butter (room temperature)
- 125 gram sugar
- 100 gram brown sugar
- 1 tsp vanilla extract
- 1 egg (medium)
- 225 gram self-raising flour
- ½ tsp baking soda
- 100 gram white chocolate chips
- 75 gram dried cranberries
EQUIPMENT:
- Hand mixer
- Baking sheet
- Parchment paper
- Ice-cream scoop
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 175 degrees Celsius / 345 Fahrenheit top and bottom heat.
- Using a hand mixer, beat together the butter, sugar, brown sugar and vanilla extract, adding the egg half way.
- Gradually add the flour and baking soda.
- Finally, fold in the white chocolate chips and cranberries.
- Cover a baking sheet with parchment paper and use an ice-cream scoop (or a spoon) to scoop even balls of dough onto the tray. Make sure you leave enough space between the cookies as they will expand a little during baking.
- Bake the cranberry cookies in batches for about 12-14 minutes. Leave to cool and enjoy!
