Although I’m a big fan of homemade chocolate chip cookies, these brown butter chocolate chip cookies are an absolute knock-out! Because they really are something else. They take a little longer to make because you’re also making the beurre noisette, but as far as I’m concerned, it’s totally worth the time! This is definitely one of my favorite cookie recipes. Another one of my favorites are these cranberry and white chocolate cookies, sooo good!

What is beurre noisette?

Beurre noisette, also known as browned butter, translated to hazelnut butter. Although it has nothing to do with hazelnuts, but rather the nutty flavor that comes from browning melted butter. Browned butter combines beautifully with milk chocolate and takes the flavor to the next level in these brown butter chocolate chip cookies. It is not at all difficult to make, but there are a few things to keep in mind to ensure success.

Tips for making beurre noisette for browned butter cookies

  • Get a pan where you can see the color well – use a metal pan or one with a light color.
  • Continue to stir/turn the pan while the butter is melting and also when the protein is separating/starting to foam.
  • When the butter is light brown and begins to smell nutty, pour it into a small bowl where it will darken a bit more.
  • Above all, don’t go on too long, as this can give your butter a burnt taste. But don’t stop too soon, as soon as is starts to smell nutty you’re golden!

I use beurre noisette in these brown butter chocolate chip cookies, but it can also give an extra flavor boost to other baked goods or savory dishes. You can also ad it to a piece of grilled meat, a pasta dish or roasted vegetables. Delicious!

Perfect chocolate chip cookie recipe 

With this (cooled) delicious beurre noisette, you make the cookie dough. Mix in some of your favorite chopped chocolate and in the oven they go. Luckily, the cookies don’t have to be in the oven for very long, and in my opinion. And best of all, they only need to cool a little because I think these chocolate chip cookies are at their best when they’re still warm and chewy inside with crispy edges on the outside. Who doesn’t like a perfectly chewy chocolate chip cookie recipe?

I like to use an ice cream scoop to make even balls of dough instead of rolling them by hand. It makes an otherwise messy task really quick and easier to clean up after. Let’s get in to the kitchen and make one of my favorite recipes; brown butter chocolate chip cookies!

Ingredients

12 cookies
  • 125 grams unsalted butter
  • 75 grams light brown sugar
  • 75 grams white sugar
  • 2 eggs (medium)
  • 1 teaspoon baking soda
  • 175 grams all purpose flour
  • 200 grams chocolate chips (optionally half dark and half milk)

  • Parchment paper

INSTRUCTIONS (how to make this recipe):

  • Place the unsalted butter in a saucepan. Melt the butter and let it brown, turning the pan occasionally.
  • Do this until the butter is light brown and begins to smell like nuts. Place the butter in the bowl of a food processor and let it cool down to room temperature.
  • Add the sugar to the food processor and mix for a few minutes until the butter and sugar are light and fluffy.
  • Add the eggs and mix briefly, then add the baking soda and flour.
  • Add the chocolate chips and mix into the cookie dough with a spatula. Place the dough in the refrigerator to set for one hour.
  • Meanwhile, preheat the oven to 185 degrees Celsius/ 365 Fahrenheit, top and bottom heat.
  • Using an ice cream scoop or spoon, scoop balls of cookie dough onto a baking sheet lined with parchment paper, making sure to leave enough space between cookies – bake in sections if necessary.
  • Bake the cookies in the oven for about 10 minutes until golden brown. They may spread a bit, after baking take a cooking ring or cutting ring and use it to push the cookies back into shape just after baking.
  • Sprinkle some fleur de sel on top to taste (optional). Enjoy your cookies!
