Brie brûlée not only sounds incredibly delicious – it is! Warm brie from the oven is bliss, and even more so when combined with a very thin layer of caramelized sugar. Insanely delicious and incredibly easy to make.

Caramelized brie brûlée

Break through the crispy layer of caramelised sugar, dip your baguette into the warm salty cheese – the perfect combination of savory and sweet. It is this combination that makes it so delicious and a little more special than a regular slice of brie.

It’s the ultimate snack, if you ask me. Of course, it’s all the more fun if you turn it into a nice cocktail platter, as I did, but you don’t have to. This brie brûlée is delicious on its own and makes for an amazing, fuss-free appetizer!

Brie or camembert from the oven?

You can make this starter with either brie cheese or camembert, whichever you prefer. In both cases, cut off the top of the cheese so that it is open and can melt well in the oven. You add a few simple spices, some garlic cloves, a little honey and, of course, the sugar coating. Make sure to assemble the brie brûlée in a small baking dish so it’s easy to bake and serve!

This is done after the cheese has been baked in the oven. Just sprinkle some sugar over the cheese and burn it with a kitchen torch. If you don’t have one, you can put it under the grill for a few minutes to get a crispy coating.

Brie brûlée

Ingredients

4 people
  • 1 clove garlic
  • 1 brie cheese (250 gram)
  • 1 tbsp honey
  • 1-2 tbsp cane sugar

Equipment

  • Small baking dish
  • Brûlée burner

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 200 degrees Celsius / 390 Fahrenheit top and bottom heat.
  • Peel the garlic and cut into 3 long pieces.
  • Remove the brie from its packaging and put it in and oven save dish so that it won't leak in the oven.
  • Using a sharp knife, cut all the way through the white top of the Brie.
  • Insert the garlic cloves and drizzle with the honey.
  • Put the brie in the oven for about 15 minutes.
  • Then sprinkle with the cane sugar and burn with a brulee/gas burner so that the sugar melts and forms a thin layer of caramel. For a few minutes under the grill is also possible.
  • Serve with French bread and enjoy!
Good to know:
For the photos I used an extra large brie cheese, but as a round brie is normally about 250 grams, I have adjusted the proportions in the recipe accordingly.
