Preheat the oven to 200 degrees Celsius / 390 Fahrenheit top and bottom heat.
Peel the garlic and cut into 3 long pieces.
Remove the brie from its packaging and put it in and oven save dish so that it won't leak in the oven.
Using a sharp knife, cut all the way through the white top of the Brie.
Insert the garlic cloves and drizzle with the honey.
Put the brie in the oven for about 15 minutes.
Then sprinkle with the cane sugar and burn with a brulee/gas burner so that the sugar melts and forms a thin layer of caramel. For a few minutes under the grill is also possible.
Serve with French bread and enjoy!

For the photos I used an extra large brie cheese, but as a round brie is normally about 250 grams, I have adjusted the proportions in the recipe accordingly.
