I love cucumber all year round, but especially in the summer. The moisture in cucumbers makes them wonderfully refreshing on hot days. They’re great on their own, but even better in a salad. This simple Asian cucumber salad is a real hit! It’s fresh, sweet, sour and a little spicy. The perfect combination, if you ask me!

This Asian cucumber salad is a great addition to an Asian meal such as chicken teriyaki or sweet and sour meatballs, but it also goes well with a BBQ or dinner party. Here are some more side dishes with cucumber:

For this Asian-style salad, I use crispy chili oil, among other ingredients. If you’re not familiar with it, I highly recommend buying a jar (or making your own) because it’s delicious! You can find it in supermarkets, as well as in Asian grocery stores. If you don’t have any at home, you can still make this salad using red pepper instead.

Furthermore, I use sesame oil, ginger, garlic, soy sauce and vinegar. It is incredibly easy to make. Just mix all the ingredients for the dressing together, then cut the cucumber into large pieces. Mix everything together, sprinkle some toasted sesame seeds on top and you’re done!

Alternatively, you can make a spiral cucumber salad. Perhaps you’ve seen the recent TikTok trend for this. To make it, cut the crunchy cucumbers on both sides: one side straight and the other diagonally, to create a spiral. However, it’s just as tasty with ‘regular’ coarsely chopped cucumber.

Ingredients

  • 1 cucumber
  • 1 clove garlic (crushed)
  • 1 tsp fresh ginger (grated)
  • 2 tbsp soy sauce
  • 2 tsp crispy chilli oil (or chili flakes to taste)
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 tsp vinegar
  • sesame seeds

INSTRUCTIONS (how to make this recipe):

  • Wash and cut the cucumber, skin on, into large pieces.
  • Crush the garlic and mix it with the other ingredients.
  • Mix the cucumber with the dressing.
  • Garnish with sesame seeds and enjoy!
