The perfect summer salad with crispy Boursin, it is so unbelievably delicious! This had quickly become one of my favorite easy salad recipes with lots of fresh veggies and a burst of flavor.

You are probably familiar with the classic warm goat cheese salad. This summer salad is inspired by that, but with crispy fried Boursin gourmet cheese. Deliciously warm, soft and salty with a crunchy coating. The end result was so delicious, even more delicious than I had hoped and has been on constant rotation in our house!

As soon as summer starts, salad season is opened! Which is why I have a very handy list of summer salads including this classic Caesar salad or my creamy cucumber salad. It might not surprise you that I love a good salad, and like to experiment with new flavors and combinations. This summer salad with Boursin is an exciting combination of textures and flavors and has definitely become one of my favorite salads.

How to make a fresh summer salad

This salad is super easy to make and is packed with fresh ingredients such as creamy avocado, romaine lettuce, cherry tomatoes and cucumber. It’s also made very quickly, you’ll spent the most time on making the star of the show; the crispy Boursin. You have to put the Boursin slices in the freezer for two hours before you can fry them. Patience is a virtue, but this summer salad is well worth the wait.

Fry the Boursin slices in a thin layer of oil, or shallow fry, until golden brown. This, of course, is the opposite of deep frying. And no, unfortunately you can’t fry them in the oven 😉 . I’ve tried everything, but you get the best, tastiest, crispiest coating by frying them in a thin layer of oil! Another great recipe that uses Boursin is my amazing shakshuka, you should really try it!

This salad is really nice and can definitely be eaten for dinner. It is delicious with a fresh baguette or you can serve it as a side dish. It’s also absolutely perfect to take to work with you or bring to a picnic or BBQ. The possibilities are endless!

A great summer salad with tons of fresh veggies, a delicious dressing and the star of the show; crispy fried Boursin Gourmet cheese. A-ma-zing!

Ingrediënts 

For the salad
  • 150 grams Boursin Gourmet cheese
  • 1 boiled egg
  • 50 grams panko breadcrumbs
  • 2 baby romaine lettuce (chopped)
  • 150 grams cherry tomatoes (halved)
  • ½ cucumber (sliced)
  • 1 ripe avocado (sliced)
For the dressing
  • 2 tablespoon honey
  • 1 teaspoon chili flakes
  • ½ lemon (juice)
  • 1 teaspoon garlic powder
  • olive oil, salt & pepper to taste

EQUIPMENT:

  • Baking sheet
  • Large skillet

INSTRUCTIONS (how to make this recipe):

  • Roll a small amount of Boursin into a ball and flatten into a nice disk. Repeat until you run out of Boursin.
  • Place the slices on a baking sheet and freeze for at least 2 hours.
  • Then roll them in a beaten egg and then in the panko.
  • Fry the Boursin in a pan with a thin layer of oil until crisp and golden brown.
  • Meanwhile, mix all the ingredients for the dressing.
  • Prepare plates and arrange the lettuce, cherry tomatoes, cucumber, avocado, crispy Boursin and dressing on top. Enjoy!
