Zucchini fritters, these delicious savoury fritters are made with zucchini, feta and herbs. They’re super easy to make, a real treat, and nutritious too. Perfect!
Crispy zucchini fritters
I got the idea to make these cookies because, as you may know, I have a vegetable garden and I’ve had a huge zucchini harvest! They look beautiful, especially with those amazing flowers on them. But they’re delicious, so it was time to make something tasty with them!
I used green and yellow courgettes for these zucchini fritters, but you can use just one colour if you prefer. This is one of my favorite zucchini recipes, they are crispy, light, savoury and fresh. The perfect summer treat and completely glutenfree!

Greek zucchini fritters recipe
You may also know these as Greek zucchini fritters (kolokithokeftedes in Greek). They are made with feta, which, of course, is Greek and goes really well with the taste of courgette, especially when combined with garlic, chives and oregano.
Feel free to vary the herbs to suit your own taste. For example, you sometimes find them with mint and/or dill. I have made a low-carb, gluten-free version using almond flour. If you don’t have any, you can replace it with regular flour at a ratio of 1:1.
They can be eaten hot or cold and are best served with a tzatziki sauce and your Greek feast is complete!

Golden brown and crispy
These crispy zucchini fritters are truly delicious. They are crispy on the outside and soft on the inside. They are also very versatile. They make a great healthy snack as they are low in carbohydrates and gluten-free, but they are also delicious as a savoury vegetarian snack.
They make a great side dish for dinner and are also perfect for lunch. Add them to a variety of small snacks and you can serve them as an appetizer, alongside some drinks or at parties. I like to combine them with some pizza pinwheels and these honey garlic wings.

Easy zucchini fritter recipe
These zucchini fritters are really easy to make. Grate the zucchini using a coarse grater or the one on your food processor, then leave it to stand with some salt for a while. Then, squeeze out the excess moisture, mix with the other ingredients and fry in a pan until crispy. This recipe makes about 10 fritters, depending on their size.
My top baking tip is to use a good spatula to turn the fritters over, and not to do it too quickly or they may fall apart. First, bake one side until cooked through, then turn them over and bake the other side. Success guaranteed!


Ingredients
- 500 gram zucchini
- 1 tbsp fresh chives (finely chopped)
- 1 clove garlic (finely chopped)
- 1 tsp dried oregano
- 50 gram almond flour*
- 50 gram feta cheese (crumbled)
- 1 egg
- olive oil, salt and pepper.
- tzatziki (to taste)
Equipment
- Coarse grater
- Big bowl
- Frying pan
- Spatula
INSTRUCTIONS (how to make this recipe):
- Wash the zucchini and grate it using a coarse grater. Sprinkle some salt over the zucchini, mix it in, and leave it for 10 minutes to draw out the moisture.
- Squeeze all the moisture out of the zucchini and place it in a large bowl.
- Add the ingredients for the zucchini fritters and stir with a spatula until you have a thick batter.
- Heat a little oil in a frying pan, add a tablespoon of the mixture to the pan and flatten it slightly to form a patty. Fry on both sides until golden brown, then repeat for the rest of the fritters. Serve with the tzatziki sauce and enjoy!
