Zucchini fritters

Zucchini fritters, these delicious savoury fritters are made with zucchini, feta and herbs. They're super easy to make, a real treat, and nutritious too!

Ingredients

10 pieces
  • 500 gram zucchini
  • 1 tbsp fresh chives (finely chopped)
  • 1 clove garlic (finely chopped)
  • 1 tsp dried oregano
  • 50 gram almond flour*
  • 50 gram feta cheese (crumbled)
  • 1 egg
  • olive oil, salt and pepper.
  • tzatziki (to taste)

Equipment

  • Coarse grater
  • Big bowl
  • Frying pan
  • Spatula

INSTRUCTIONS (how to make this recipe):

  • Wash the zucchini and grate it using a coarse grater. Sprinkle some salt over the zucchini, mix it in, and leave it for 10 minutes to draw out the moisture.
  • Squeeze all the moisture out of the zucchini and place it in a large bowl.
  • Add the ingredients for the zucchini fritters and stir with a spatula until you have a thick batter.
  • Heat a little oil in a frying pan, add a tablespoon of the mixture to the pan and flatten it slightly to form a patty. Fry on both sides until golden brown, then repeat for the rest of the fritters. Serve with the tzatziki sauce and enjoy!
Good to know:
*You can also use wheat flour, but you may need to add more or less, so add it gradually until you achieve the right consistency.
Tip: Use a good spatula to turn the fritters over, and don't do it too quickly or they may fall apart. Bake one side until cooked, then turn them over and bake the other side.
