I love puff pastry, but you’ve undoubtedly already noticed that if you’ve been keeping an eye on my recipes. These sausage rolls or these pizza pinwheels are some of my favorites, but this new recipe for stuffed puff pastry bites with chicken is well on its way to becoming the new top favorite.

Easy Puff Pastry Bites with Chicken
The most important thing for me with puff pastry recipes is that they have to be easy, and these delicious puff pastry bites with chicken filling absolutely meet that requirement. I make them with plenty of caramelized onions. I use minced meat in many of my puff pastry recipes, in this case I chose a chicken filling like in my savory pastry bites.
What do you need for these Puff Pastry Snacks?
An important part of this recipe is the caramelized onions. It’s handy if you’ve already made those in advance, because you’ll need to set aside a bit of time for them. Furthermore, you’ll need:
- Puff pastry, store-bought is just fine!
- Ground chicken, as the base of the filling
- Spices, smoked paprika, garlic and onion powder are used as seasoning
- Grated cheese, I like to use a semi-mature cheese that melts easily like Gouda
- Mustard, a very important flavoring that adds a nice zing to the bites

How to make Puff Pastry Bites
Making the puff pastry bites is as simple as mixing all the ingredients together. One thing to keep in mind is that you should place the puff pastry roll with the filling in the freezer for a while afterward. If you don’t do that and start slicing immediately, you’ll see that the filling gets squeezed out. About 30 minutes in the freezer ensures that the filling becomes firmer, allowing you to cut it into neat slices.
I like to serve them with some mayonaise, sweet chili sauce or even a bit of Big Mac sauce would work wonderfully.

Yes, that works perfectly fine. For example, you can choose to firm up the roll in the freezer, slice it, and then place the puff pastry bites back in the freezer or in the refrigerator. You can also store them in the refrigerator for 2–3 days,

The best way to reheat them is in the air fryer at 180 degrees Celsius / 356 Fahrenheit for 5 minutes, or in the oven at the same temperature for 8 minutes.
Can I use ground beef instead of chicken?
Absolutely! You can substitute it 1:1.

Ingredients
- 300 gram ground chicken
- 3 onions (caramelized)
- 2 tsp paprika powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 50 gram grated cheese
- 1 tsp Dijon mustard
- salt and pepper to taste
- 1 sheet puff pastry
- 1 egg yolk
- splash of milk
- sesame seeds
Equipment
- Plastic wrap
- Baking sheet
- Parchment paper
- Pastry brush
INSTRUCTIONS (how to make this recipe):
- For the filling, mix all the ingredients (except for the sheet of puff pastry) together and season with salt and pepper.
- Roll out the sheet of puff pastry, with the long side facing you, leaving 3 cm free, then spread the filling horizontally over the puff pastry.
- Now roll up the puff pastry with the filling and make sure the seam is on the bottom. Wrap in plastic wrap and place the roll in the freezer for 30 minutes so you can cut it into pieces more easily.
- Meanwhile, preheat the oven to 200 degrees Celsius / 392 Fahrenheit with top and bottom heat.
- After half an hour, remove the puff pastry roll with chicken mince filling from the freezer and cut into 8 pieces. Place on a baking tray lined with parchment paper.
- Beat an egg yolk with a splash of milk and brush it over the puff pastry roll. Sprinkle with sesame seeds if desired.
- Bake the puff pastry snacks with chicken for about 15–20 minutes until golden brown. Let cool on a cooling rack after baking and enjoy!
