For the filling, mix all the ingredients (except for the sheet of puff pastry) together and season with salt and pepper.
Roll out the sheet of puff pastry, with the long side facing you, leaving 3 cm free, then spread the filling horizontally over the puff pastry.
Now roll up the puff pastry with the filling and make sure the seam is on the bottom. Wrap in plastic wrap and place the roll in the freezer for 30 minutes so you can cut it into pieces more easily.
Meanwhile, preheat the oven to 200 degrees Celsius / 392 Fahrenheit with top and bottom heat.
After half an hour, remove the puff pastry roll with chicken mince filling from the freezer and cut into 8 pieces. Place on a baking tray lined with parchment paper.
Beat an egg yolk with a splash of milk and brush it over the puff pastry roll. Sprinkle with sesame seeds if desired.
Bake the puff pastry snacks with chicken for about 15–20 minutes until golden brown. Let cool on a cooling rack after baking and enjoy!
