It is always nice to have a few tried and true recipes to use whenever you want. A simple weeknight diner with veggies and meat, or your favorite steak, is easily taken to another level with a great homemade sauce such as this black peppercorn sauce or this mushroom sauce for example!

Peppercorn sauce is a very versatile sauce that is the perfect accompaniment to a good steak or, for example, a festive beef wellington. Best of all, it is an insanely simple sauce to make and contains only a handful of ingredients! Many of these ingredients you probably already have on hand 😉 .
How to make a creamy peppercorn sauce recipe
Peppercorn sauce is made in different ways but often remains the same in essence. The base is always some kind of roux with cream, you can use heavy cream or cooking cream, and peppercorns. You can add beef stock, as I did, but I also come across many variations with a little whiskey or cognac. My recipe doesn’t contain any alcohol, but please feel free to add some if you like!

Types of peppercorns
Besides the classic black peppercorns, you can also use a mix of different types of whole peppercorns, as I did, or opt for only green peppercorns, pink or white peppercorns. You can customize this sauce entirely to your taste. Get creative!
Tips for a rich sauce
I have a few handy tips for you to make making this sauce even easier:
- I recommend using a whisk to make the sauce nice and smooth and creamy.
- Do you want to make sure it is really smooth? Then use an immersion blender to get it super smooth and creamy.
- It is also nice if you have a sturdy small saucepan with a thick bottom for this recipe, that way it will not burn and you can heat it evenly.


Ingredients
- 1 small onion (chopped)
- 1 tbsp all-purpose flour
- 1 tbsp whole peppercorns
- 250 ml beef stock
- 100 ml heavy cream
- butter, salt, pepper
Equipment
- Whisk
- Immersion blender
- Small saucepan
INSTRUCTIONS (how to make this recipe):
- Heat a little butter in a small saucepan, sauté the onion briefly and then add the flour.
- Pour in the beef stock together with the cream and stir well with a whisk.
- If necessary, puree the sauce smooth with a immersion blender.
- Add the peppercorns and let them cook along.
- Reduce the sauce to the desired thickness and season with extra ground pepper and some salt. Enjoy!
