Mexican casserole, a kind of lasagne but with wraps, chilli beans, a nice spicy meat mixture and melted cheese that’s really delicious! Topped with tortilla chips, a dollop of sour cream and avocado, it’s a real feast.

The ultimate Mexican casserole 

OK, don’t let the Italians know I call this Mexican casserole a type of lasagne. But it is certainly similar in structure. You make layers of flour tortillas and a spiced beef mixture in tomato sauce. Then you sprinkle it with cheddar cheese and put it the baking dish in the oven. Sounds delicious, doesn’t it?

This easy Mexican casserole recipe is the perfect comfort food meal. Deliciously savory with melted cheese and crispy nacho chips on top!

The reason I love this recipe so much is that it is super easy to make, packed with flavor and veggies and perfect for the whole family. I like to use my own taco seasoning blend, red bell peppers, chili beans, sweet corn and ground beef. Feel free to add your favorite veggies or beans in the mix!

It has all the classic flavors I love about Mexican food and will definitely curb your cravings! Just assemble the casserole and let the oven do it’s thing, this leaves you plenty of time to do other things or make a nice salad to go with it.

I like to toss together some red onion, tomatoes, cucumber and extra sweet corn with a simple dressing as a side salad. Add some sour cream, fresh avocado, lime and, if you dare, some cilantro before serving the casserole and enjoy!

Ingredients

6 people
  • 1 yellow onion (chopped)
  • 2 cloves garlic (finely chopped)
  • 500 gram ground beef
  • 1 tsp cumin powder
  • 1 tsp paprika powder
  • 1 tsp chili powder (optional)
  • 1 tsp oregano (dried)
  • 2 red bell peppers (diced)
  • 150 gram sweet corn
  • 400 gram chili beans (or red kidney beans)
  • 400 gram diced tomatoes
  • 4 small flour tortillas
  • 150 gram cheddar (grated)
  • 1 handful cilantro (or parsley, roughly chopped)
  • 100 gram tortilla chips (roughly crushed)
  • 1 avocado (sliced)
  • olive oil, salt and pepper
  • optional: lime, sour cream, salad, red pepper or jalapeño

Equipment

  • Frying pan
  • Baking dish or ovenproof dish

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 180 degrees Celsius / 355 Fahrenheit top and bottom heat.
  • Heat some olive oil in a frying pan and sauté the onion and garlic.
  • Add the beef and fry it until browned. Add the cumin, paprika, chili powder, oregano, salt and pepper to taste and stir well.
  • Add the peppers, corn, chili beans and diced tomatoes. Simmer for 5-7 minutes.
  • Grease an ovenproof dish and cover the base with 2 flour tortillas and half of the beef mixture. Place the other 2 wraps on top of the minced meat mixture in the oven dish, then spread the other half of the minced meat over the wraps.
  • Add the cheese on top and bake for 20-25 minutes or until the cheese is golden brown and bubbling.
  • Garnish with coriander or parsley, crushed nacho chips and avocado. If desired, serve with lime, red pepper or jalapeño, a fresh salad and sour cream. Enjoy your meal!
