I love Mexican food, so flavorful and often not complicated at all. And that includes this delicious recipe for chicken fajitas filled with spicy chicken, vegetables, a fresh avocado salsa and tomato-salad. So easy and delicious!

These chicken fajitas are my go to on fajita nights. They’re warm and spicy and fresh in flavor, amazing during the summer but just as tasty during the rest of the year. The juicy chicken and vegetables are well seasoned and the homemade salsa is definitely a must. It’s packed with so much flavor!
Delicious chicken fajita recipe
To make these chicken fajitas, season both the chicken thighs, green bell peppers and red bell peppers and fry them until golden brown. This allows the flavors of the seasonings to soak in. I used a mix of Cajun spices, (smoked) paprika, cumin, ginger and cayenne pepper. A delicious combination! You can always add a little less (or more) spice by playing with the amount of cayenne. It’s all up to you!

Make your own chicken fajitas
These fajitas are definitely not hard to make. The nice thing is that you make them in one pan which makes it very fast and easy to wash up, win-win! First saute the peppers with onions and spices, then saute the chicken thighs with herbs in the same pan. I opted for chicken thighs because they make the dish deliciously tender but you can also use chicken breasts if you prefer. Happy cooking!
Ingrediënts
- 3 bell peppers (cut into strips)
- 1 red onion (chopped)
- ½ teaspoon ginger powder
- 1 teaspoon sweet paprika
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- 2 teaspoons Cajun seasoning
- 400 grams chicken thighs (cut into pieces)
- 8 wraps (small or medium, e.g. gorditas)
- 2 avocados (diced)
- 1 red onion (chopped)
- 2 tomatoes (diced)
- 4 tablespoon extra virgin olive oil
- 1 lime (juice)
- 2 handfuls fresh coriander (finely chopped)
- 4 tomatoes (diced)
- 4 tablespoons sunflower oil
- 10 ml vinegar
- 1 garlic clove (pressed)
- 2 handfuls fresh coriander (finely chopped)
- salt and pepper
EQUIPMENT:
- Large skillet
INSTRUCTIONS (how to make this recipe):
- Heat some olive oil in a large skillet over medium-high heat and add the sliced bell pepper and onion. Cover the pan and cook for about 5 minutes. Stir frequently.
- Add the teaspoon ginger powder, half of the sweet paprika, smoked paprika, cayenne pepper, cumin, half of the Cajun seasoning and salt and pepper to taste. Mix the spices with the vegetables and stir to combine. Continue to cook the vegetables for another 5 minutes. Remove the vegetables from the pan.
- Add the chicken to the same skillet and cook until tender. Add the rest of the sweet paprika and Cajun seasoning, add salt and pepper to taste and mix well.
- Make the avocado salsa. Place the avocado in a bowl with the tomatoes, onion, lime juice and olive oil. Add salt and pepper to taste along with the cilantro. Stir to combine.
- Make the tomato salad. Place the tomatoes in a bowl with the sunflower oil and vinegar. Add the coriander and garlic and season with salt and pepper. Stir to combine.
- If desired, stir in the chicken and bell pepper to heat through. Heat the wraps, fill with the chicken and peppers, top with the avocado salsa and enjoy with a delicious bowl of tomato salad on the side. Enjoy!
