I have another delicious recipe for an easy green bean casserole. Inspired by my love for casseroles, because they are just really delicious. Take my chicken and pasta casserole or sauerkraut casserole, for example. You might not think of using green beans in this way, but it works really wel in this recipe!

Homemade green bean casserole
In fact, the combination of simple ingredients like potato slices, minced meat and fresh green beans with curry powder and, of course, a delicious layer of golden-brown cheese on top is a real treat. You don’t need a lot of ingredients, and it’s not overly complicated to prepare, with the oven doing most of the work. Meanwhile, you have time to do other things, which is ideal for busy weekday evenings!

Fresh green bean casserole recipe
You can use fresh or frozen green beans for this green bean casserole. Just make sure you don’t blanch them for too long as you want them to still have a little crunch. If you want to add some extra vegetables, some mushrooms or peppers would definitely be nice!

Tasty and easy casserole dish
This recipe is definitely in the tasty and really easy category, which is what I always try to do with the recipes I share with you. Of course, you can adjust this recipe to your own preferences. You could even make a vegetarian version by using plant based mince, possibly combined with lentils.
This casserole was definitely a hit in our home, even the kids loved it. It is ideal for freezing or saving leftovers for lunch the next day. Enough chitchat, it’s time to make this delicious green bean curry and minced meat casserole. Enjoy!



Ingredients
- 400 gram green beans
- 600 gram potato slices (pre cooked)
- 1 onion (chopped)
- 2 cloves garlic (crushed)
- 500 gram minced meat
- 2 tsp curry powder
- 2 eggs
- 250 ml heavy cream
- 1 tsp onion powder
- 75 gram mozzarella (grated)
- 75 gram aged Gouda (grated)
- 1 cube vegetable stock
- oil, pepper and salt
- optional: fresh parsley
Equipment
- Frying pan
- 20×20 cm / 8×8 inch oven dish
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 175 degrees Celsius / 345 Fahrenheit top and bottom heat.
- Cook the beans for about 8 minutes until al dente and the potato slices for 10 minutes.
- In a large frying pan, fry the onion and garlic in a little oil. Add the minced meat and fry until brown.
- Add half of the curry powder and salt and pepper to taste.
- Add the green beans and cook over a low heat with the meat for a further 5 minutes.
- Drain the potatoes well and place half of the potatoes in the dish, then add the green beans and minced meat. Arrange the other half of the potatoes on top of the green beans.
- Mix the eggs with the heavy cream, 3/4 of the cheeses, onion powder, curry powder and crumble into the stock cube. Season to taste with salt and pepper. Mix well with a whisk. Pour the cream over the potatoes. Garnish with the remaining cheese.
- Bake in the oven for 30-45 minutes until cooked and golden brown and the cheese is melted. Garnish with fresh parsley if desired. Enjoy!
