Sauerkraut casserole like you’ve never tasted it before! This one is so incredibly delicious, easy to make and really an all around favorite. It is made with flavorful shawarma, a nice layer of tangy sauerkraut, potato slices and a creamy mixture with crème fraîche and aged cheese. Love at first bite!

Hearty casserole

This fall, I am fully embracing the convenience of casseroles. Because admit it, they are nice and filling, comforting and the oven does most of the work! Ideal, if you ask me. In this recipe I use natural homemade sauerkraut, but you can also use store-bought, spiced sauerkraut or even sauerkraut with white wine, for even more flavor! I top this sauerkraut casserole with potato slices, but you could also use mashed potatoes.

Healthy sauerkraut casserole

Sauerkraut is a delicious way to eat cabbage. You can easily buy it at the grocery store, but you can also look around at the market or at an organic specialty store. Either way, I encourage you to eat more sauerkraut this season because it is a true superfood! A perfect excuse to make this sauerkraut casserole.

Fermented cabbage

Like kimchi, sauerkraut (when prepared correctly) is a fermented cabbage preparation. Because of the fermentation, sauerkraut is packed with healthy gut bacteria and is really, really great for your digestion and immunity. You can also store it for a very long time, which is perfect for the harsh winter months ahead. And even if we get a mild winter, sauerkraut is still a very good staple in your cupboard.

The secret ingredient in this delicious sauerkraut casserole is shawarma. This may sound crazy, but it really is a delicious flavor combination! It’s also great if you have leftover shawarma, or if you want to use convenient well-seasoned meat.

I made the shawarma in this recipe from seasoned pork chops that I cut into strips. Season generously with shawarma seasoning and you have a delicious base for this casserole. You can also use chicken shawarma or make it easier on yourself by getting shawarma from the grocery store or butcher. The choice is yours 😉 . Another lovely shawarma dish are these chicken shawarma sandwiches, so good!

Making a sauerkraut casserole dish

This is one of my favorite casseroles because it is so easy to make. It does not contain a lot of difficult ingredients but is still packed with flavor. Aside from sauerkraut and potato slices, a ton of flavor is coming from the cream mixture made with onion and garlic powder. It is a true comfort food and one of my favorites!

Once you’ve prepared the shawarma and sauerkraut, it’s a simple matter of building layers in a baking dish, spreading the cream mixture and topping it with grated cheese. The oven then does the final work, giving you a tasty casserole with a crispy crust and perfectly melted cheese! I like to use an aged Gouda, but you could definitely use different cheeses!

Ingredients

6 people
  • 500 grams shawarma
  • 500 grams sauerkraut
  • 2 eggs
  • 150 grams crème fraîche
  • 50 ml milk
  • 1 tablespoons parsley (chopped or dried)
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 500 grams potato slices (pre-cooked)
  • 75 grams aged Gouda (or other cheese, grated)
  • salt and pepper

Equipment

  • Casserole dish

INSTRUCTIONS (how to make this recipe):

  • Preheat oven to 175 degrees Celsius / 350 Fahrenheit top and bottom heat.
  • Bake the shawarma until cooked and put the shawarma into the casserole dish. Make sure the shoarma is nicely seasoned, add some extra shawarma seasoning if necessary.
  • Heat the sauerkraut with 2 tablespoons of water in a saucepan for about 5 minutes.
  • Make the cream mixture by mixing the eggs with the crème fraîche, milk, parsley, onion and garlic powder. Season to taste with salt and pepper.
  • Spread the sauerkraut on top of the shawarma. Layer the potato slices on top and pour the cream mixture over the top. Finally, sprinkle the grated cheese over the top.
  • Put the dish in the oven for about 30-40 minutes until everything is hot and the cheese is golden brown. Enjoy your meal!
