These sourdough crackers are made from sourdough scraps — or discard. Don’t throw it away, you can use them to make delicious, crunchy sourdough crackers! The recipe is incredibly easy, and best of all, you’ll use up your sourdough scraps in no time.

These sourdough crackers are the perfect treat for anyone who enjoys making and baking their own sourdough bread. This way, you can enjoy your sourdough journey in a different way between baking and feeding!

What is sourdough discard?

They are made with sourdough discard, this is the excess sourdough starter that remains after feeding your active starter. Often, this is only a small amount and the rest of the starter is used for bread or something else.

You may also find that after feeding your starter, you don’t bake anything with it. In this case, you will often have more sourdough starter left over after the next feeding. This is then surplus or discard. I keep my discard in a large glass jar in the refrigerator, and when I have accumulated a lot, I use it to make these discard crackers.

Making these crackers is a great way to avoid waste, as nothing needs to be thrown away and you can enjoy these homemade sourdough crackers to the fullest. They are ideal with drinks or charcuterie and make for the perfect snack.

Homemade crackers

Try varying the toppings for your sourdough discard crackers! Below, you will find my basic recipe for making sourdough crackers. I have made them many times and always vary the toppings. Here are a few tasty suggestions:

  • Try adding everything but the bagel seasoning along with some coarse sea salt. All the flavor and minimum effort, perfect!
  • Try adding grated Parmesan cheese, sesame seeds and coarse sea salt, or mixing 2 teaspoons of smoked paprika powder into the batter. This combination makes for some great cheese crackers!
  • For a Mediterranean twist, try some Italian herbs mixed into the batter along with a little coarse sea salt and freshly ground pepper. Delicious!

Sourdough discard cracker recipe

As well as large crackers to enjoy as a snack or with breakfast, depending on how small or big you cut these crackers. Some of my favourite ways to serve them are with a spread or dip, like this garlic butter, or alongside a cheeseboard. Try my brie brûlée recipe, it would make the perfect pairing!

You can choose the size of the crackers yourself. I find it handy to use a pizza cutter to cut them. The recipe tells you exactly when to do this.

Easy recipe for crunchy crackers

These crackers are incredibly easy and uses just a few simple ingredients. I’m sure you have all the necessary ingredients at home. Apart from the sourdough leftovers, you only need olive oil or melted butter and salt. You can choose your own toppings depending on what you have available. It’s that easy!

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 170 degrees Celsius / 338 Fahrenheit with top and bottom heat.
  • Mix the olive oil** and sourdough discard well.
  • Spread over a baking tray lined with baking paper, sprinkle with coarse sea salt to taste and add any other toppings you like. See tips in the article!
  • Bake in the oven for 10 minutes and then cut into strips or pieces. A pizza cutter is useful for this step.
  • Bake for another 30-40 minutes until golden brown.
  • Allow to cool slightly, then break into pieces along the edges if necessary to create nice crackers. Enjoy!
Good to know:
*Tip: you can also use melted butter instead of olive oil.
**The amount you make depends on the size of the crackers.
