Curried Egg Salad Ingredients
I always have the ingredients on hand (which is useful given the surplus of eggs I often get from our chickens). As well as eggs, I use this combination of ingredients that gives this curried egg salad its distinctive flavor:
- Mayonnaise and Dijon mustard: to make it a creamy, fatty and fresh egg salad.
- For spice: I use sambal and curry powder.
- Fresh herbs: in this salad I used chopped onion, chives and parsley for some freshness and texture.

When stored airtight, you can store the egg salad for up to 3-5 in the refrigerator. Always smell and taste test when in doubt.

Absolutely, I would start by omitting the sambal and maybe adding a bit after testing the spiciness from just the curry powder.

- 4 medium eggs
- 2 tbsp mayonnaise
- 1 onion
- 1 tbsp chives (finely chopped)
- 1 tbsp parsley (finely chopped)
- 1 tsp Dijon mustard
- 1 tsp sambal
- 2 tsp curry powder
- Olive oil, black pepper and salt
Equipment
- Small saucepan
- Frying pan
- Big bowl
INSTRUCTIONS (how to make this recipe):
- Bring a pan of water to the boil with a pinch of salt and hard-boil the eggs for about 8 minutes.
- Meanwhile, chop the onion.
- Heat a little olive oil in a pan and sautée the onion with half the curry powder until translucent and soft.
- Mash the eggs with a fork or use an egg slicer, then place them in a small bowl.
- Add the onion, mayonnaise, chives, parsley, mustard, sambal and the remaining curry powder. Mix everything together, then season with salt and pepper.
- Want it a little spicier? Then add some extra sambal or chili flakes. Enjoy your meal!
