Curried Egg Salad

This curried egg salad is a deliciously light and spicy spread! It's easy to make and perfect for brunch or whenever you're craving a spicy egg salad.

Ingredients

6 portions
  • 4 medium eggs
  • 2 tbsp mayonnaise
  • 1 onion
  • 1 tbsp chives (finely chopped)
  • 1 tbsp parsley (finely chopped)
  • 1 tsp Dijon mustard
  • 1 tsp sambal
  • 2 tsp curry powder
  • Olive oil, black pepper and salt

Equipment

  • Small saucepan
  • Frying pan
  • Big bowl

INSTRUCTIONS (how to make this recipe):

  • Bring a pan of water to the boil with a pinch of salt and hard-boil the eggs for about 8 minutes.
  • Meanwhile, chop the onion.
  • Heat a little olive oil in a pan and sautée the onion with half the curry powder until translucent and soft.
  • Mash the eggs with a fork or use an egg slicer, then place them in a small bowl.
  • Add the onion, mayonnaise, chives, parsley, mustard, sambal and the remaining curry powder. Mix everything together, then season with salt and pepper.
  • Want it a little spicier? Then add some extra sambal or chili flakes. Enjoy your meal!
