Cheesy broccoli casserole
Broccoli is a very versatile vegetable, you can marinate it, boil it, grill it, wok it, make soup from it or put it in a creamy casserole. I absolutely love casseroles and have already posted a ton of casserole recipes. But this broccoli casserole was still missing, and boy is it a good one!

Casserole season
Although I think of casseroles as something for autumn and winter, they are actually delicious and easy to make all year round! Like this broccoli casserole., it’s a dish full of vegetables, cheese (not unimportant) and seasoned ground beef. Broccoli all year round
Broccoli really is one of those vegetables you can find and enjoy in the supermarket all year round. It is the star of this broccoli casserole, where it is pre-cooked for a short time to give it the perfect bite, ideal for an oven dish. Did you know that broccoli is full of vitamins, minerals and protein? Talk about a top vegetable!

Easy broccoli casserole recipe
Enough talk, it’s time to make this casserole! Pre-cook the sliced potatoes and broccoli, then fry the onion and ground beef with all the spices. Then layer everything in an ovenproof dish.
Finally, mix the cream with two types of cheese and some vegetable stock for extra flavour.
Finish with some more cheese for some extra cheesy goodness and pop it in the oven. Bake the broccoli casserole for half an hour until golden brown and slightly crispy. Deliciously creamy with lots of bite and crispy cheese on top… sooo good!


Ingredients
- 500 gram broccoli (florets)
- 600 gram potato slices
- 1 onion (chopped)
- 500 gram ground beef
- 1 red bell pepper
- 2 clove garlic (crushed)
- 1 tsp paprika powder
- 1 tsp onion powder
- 1 egg
- 250 ml cooking cream
- 1 vegetable stock cube (crumbled)
- 50 gram sharp cheddar cheese (grated)
- 50 gram mature cheese (grated)
- oil
- salt and pepper
- 30 gram sharp cheddar cheese (grated)
- 30 gram mature cheese (grated)
- fresh parsley to garnish (optional)

INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 175 degrees Celsius / 350 Fahrenheit top and bottom heat.
- Cook the broccoli until just tender for about 5 minutes and pre-cook the potato slices for 10 minutes.
- In a large frying pan, fry the glazed onion with a little oil, then add the mince. Brown together and add the diced pepper.
- Add the garlic, paprika and onion powder and season with salt and pepper.
- Add the broccoli and cook over a low heat with the mince for 5 minutes.
- Drain the potatoes well, place half of the potatoes in the dish and add the broccoli and minced meat. Arrange the other half of the potatoes on top of the broccoli.
- Mix the egg with the cooking cream, cheddar, mature cheese, vegetable stock and salt and pepper to taste. Whisk well. Pour the cream over the potatoes. Garnish with the remaining cheese.
- Bake in the oven for 30-45 minutes until cooked golden brown and the cheese is melted. Garnish with fresh parsley if desired and serve.
