I love baking with apples, especially in the fall! Those fresh apples are so delicious when they are just harvested, or perhaps picked from your own tree, and available in abundance. This apple sheet cake with cinnamon streusel is perfect for fall baking and will make the whole house smell like a crisp fall morning with a hint of cinnamon 😉 . It’s an incredibly easy recipe, so let’s get to it!

Easy apple sheet cake
This apple sheet cake recipe has become a new family favorite. Because, what a treat it is! And the best part is that it is incredibly easy to make. You make the cake like a ‘normal’ cake. The apples are just sliced and tossed with some cinnamon and lemon, and the streusel topping is just a matter of mixing the ingredients. Tip: I like to make the streusel topping in a food processor. It’s super quick and easy, just make sure you mix it very briefly.

Ingredients
- 125 gram flour
- 100 gram light caster sugar
- 75 gram butter (cold, in small cubes)
- 1 tsp cinnamon
- pinch of salt
- 3 apples
- 2 tbsp flour
- 2 tsp cinnamon
- 2 tsp lemon juice
- icing sugar
- 200 gram butter (room temperature)
- 200 gram light caster sugar
- 3 eggs (medium, room temperature)
- 250 gram flour
- 1 tbsp baking powder
- 125 ml full fat yoghurt
- pinch of salt
Equipment
- 20×30 cm / 8×12 inch rectangular baking tin
- Parchment paper
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 175 degrees Celsius / 345 Fahrenheit top and bottom heat.
- Make the streusel by mixing all the ingredients into a crumbly mixture. Put in the fridge to set.
- To make the apple filling, peel and slice the apples. Place in a bowl with the flour, cinnamon and lemon juice. Mix well.
- To make the cake batter, put the butter and sugar in the bowl of your mixer and beat for about 5 minutes until light and fluffy.
- Add the eggs one at a time, followed by the flour, baking powder, yoghurt and a good pinch of salt.
- Pour the mixture into a greased baking tin lined with parchment paper.
- Spread the apple filling on top followed by the streusel topping.
- Bake for about 45-60 minutes. Test it with a skewer, if it comes out clean your apple sheet cake is ready.
- After baking, dust with icing sugar and enjoy!
