Apple sheet cake

Apple sheet cake, a delicious crumbly cake with creamy layers of apple and cinnamon, topped with a cinnamon streusel. So simple, yet delicious!

Ingredients

12 pieces
For the streusel
  • 125 gram flour
  • 100 gram light caster sugar
  • 75 gram butter (cold, in small cubes)
  • 1 tsp cinnamon
  • pinch of salt
For the apple filling
  • 3 apples
  • 2 tbsp flour
  • 2 tsp cinnamon
  • 2 tsp lemon juice
For the topping
  • icing sugar
For the cake batter
  • 200 gram butter (room temperature)
  • 200 gram light caster sugar
  • 3 eggs (medium, room temperature)
  • 250 gram flour
  • 1 tbsp baking powder
  • 125 ml full fat yoghurt
  • pinch of salt

Equipment

  • 20×30 cm / 8x12 inch rectangular baking tin
  • Parchment paper

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 175 degrees Celsius / 345 Fahrenheit top and bottom heat.
  • Make the streusel by mixing all the ingredients into a crumbly mixture. Put in the fridge to set.
  • To make the apple filling, peel and slice the apples. Place in a bowl with the flour, cinnamon and lemon juice. Mix well.
  • To make the cake batter, put the butter and sugar in the bowl of your mixer and beat for about 5 minutes until light and fluffy.
  • Add the eggs one at a time, followed by the flour, baking powder, yoghurt and a good pinch of salt.
  • Pour the mixture into a greased baking tin lined with parchment paper.
  • Spread the apple filling on top followed by the streusel topping.
  • Bake for about 45-60 minutes. Test it with a skewer, if it comes out clean your apple sheet cake is ready.
  • After baking, dust with icing sugar and enjoy!
