As you may know I am Dutch and a true Dutchie LOVES mashed potato dishes. Back home we call it ‘stamppot‘ which is always a combination of mashed potatoes and some type of vegetable mixed into one wholesome meal, served with some type of meat or sausage. These spinach mashed potatoes are inspired by this Dutch comfortfood.

Simple but delicious
That is how this spinach mashed potatoes recipe with bacon and egg was created, and it turned out so delicious that it will surely be on our table more often! It doesn’t take much, but this recipe proves that simple ingredients can often be delicious. And fair is fair, even the littlest eaters among us don’t like too much fuss.
Creamy spinach recipe
I love spinach, I always have. If you are from the 80s/90s you probably know the classic combination of spinach, mashed potatoes and fish sticks? I loved it as a kid which makes this mashed potatoes recipe not only very tasty, but also very nostalgic. And of course you can serve fish sticks with this spinach stew. Easy spinach mashed potatoes
I use fresh spinach for this spinach stew. I like it best, but of course you can use frozen spinach or spinach a la crème. This recipe is pretty self-explanatory.. Boil the potatoes, mash them, add the vegetables, season, and you’re done! I always add a little crème fraîche or sour cream, which makes the stew nice and creamy. To add a bit more flavor and protein I serve this comfortfood dish with boiled egg (trust me, it’s great!) and bacon bits. Let’s get cooking!


Ingredients
- 1 kilogram russet potatoes
- 150 grams bacon (diced)
- 4 eggs (boiled)
- 2 onions
- 2 cloves garlic
- 600 grams fresh spinach
- 200 grams crème fraîche
- ½ teaspoon nutmeg
- butter, salt and pepper
Equipment
- Potato peeler
- Large pot
- Frying pan
- Potato masher
INSTRUCTIONS (how to make this recipe):
- Peel and dice the potatoes.
- Place the potatoes in a large saucepan with a pinch of salt. Pour in enough water to cover the potatoes. Bring to a boil and drain when tender, after about 20 minutes.
- Cook the bacon in a frying pan and drain on paper towels.
- Chop the onion into small cubes and chop the garlic finely.
- In the same pan, add a little butter. Sauté the onion and garlic until translucent.
- Add the spinach and sauté until wilted. Season with salt and pepper.
- Mash the potatoes with a potato masher and add the crème fraîche while mashing.
- Add the spinach and bacon to the mash. Season to taste with salt, pepper and nutmeg.
- Serve with a boiled egg. Enjoy your meal!
