If you prefer another cream cheese, feel free to use your personal favorite!

How to make this breakfast pie
As I said, this recipe really does put an incredibly tasty dish on the table. Ideal for Sunday brunch or when you want to go all out for breakfast. Trust me when I tell you that everyone will love it! Another great brunch recipe is this flavor-packed shakshuka!
All you need is puff pastry dough, eggs, Boursin or any other herb cheese, pancetta (or bacon), green asparagus tips, eggs and rocket. We decorate the edge with some sesame seeds, everything but the bagel seasoning would also be delicious! The eggs on the top are not fully cooked, but if you don’t like runny eggs, you can leave them in the oven a little longer.


Ingredients
- 1 roll puff pastry (chilled – round or rectangular in shape)
- 1 egg yolk + dash of milk (whisked)
- 150 gram Boursin Garlic & Fine Herbs (or any other herb cream cheese – room temperature)
- 5 slices pancetta (or bacon)
- 75 gram green asparagus tips
- 3 eggs (medium size)
- 1 handful arugula
- salt and pepper
- sesame seeds (optional)
Equipment
- Baking sheet
- Parchment paper
- Pastry brush
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 180 degrees Celsius / 355 Fahrenheit top and bottom heat.
- Roll out the puff pastry on a lined baking sheet, fold the edges back and brush the edges with a little bit of the beaten egg yolk and milk.
- If you like, sprinkle a few sesame seeds on top for a decorative edge (optional).
- Pierce the rest of the pastry with a fork and bake the dough in the preheated oven for 10 minutes.
- Spread the (Boursin) cream cheese onto the dough.
- Top with the pancetta slices, green asparagus tips and eggs and season with salt and pepper.
- Bake in the oven for a further 10-15 minutes until the eggs have set. Just before serving, sprinkle the arugula on top and enjoy.
