These savory puff pastry bites are filled with ground chicken, vegetables and lots of delicious seasonings. You probably already have all of these ingredients at home, so it’s nothing complicated. Season the minced chicken with these ingredients to make the puff pastry bites real flavor bombs.
- Ground chicken forms the base, I prefer chicken over beef or pork in this recipe
- Veggies like bell pepper, leek and onions add a ton of flavor and texture to the bites
- Spices such as onion powder, garlic powder, smoked paprika and a touch of your favorite chicken seasoning blend bring it all together
- Fresh puff pastry, either home-made or store-bought is fine. Let it warm up a bit before handling for easy rolling

These puff pastry pockets with chicken are really easy to make and make for the perfect little snack to serve as an appetizer or on game night. How to Make Simple Puff Pastry Bites
First, sauté the vegetables and spices. Then, sauté the minced meat with herbs. Mix everything together and spread the mixture over the puff pastry.
Roll it up, cut it into pieces, brush it with egg using a pastry brush, and sprinkle with sesame or poppy seeds. Then, bake it in the oven.
This recipe makes about 30 snacks, but you can halve the recipe to make half the amount. Whatever suits you best. I can tell you they’ll be gone in no time. 😉

The best Puff Pastry
You can use store-bought puff pastry for these snacks. You can find it in the refrigerated section of the supermarket, and they work perfectly. As you can see in the photo above, the roll is whole, but for this recipe, you need to cut the puff pastry horizontally in half to make two large slices. This creates an optimal ratio between the filling and the dough!

- 1 onion (finely chopped)
- 1 red bell pepper (finely chopped)
- 1 leek (finely chopped)
- 1 tsp dried basil
- 1 tsp onion powder
- 1 tsp garlic powder
- 300 gram ground chicken
- 1 tsp smoked paprika powder
- 1 tsp chicken seasoning mix
- 2 large rolls puff pastry
- 1 egg
- Poppy seeds or sesame seeds
- Sunflower oil (salt, and pepper)
- 3 tbsp sweet chili sauce
- 2 tbsp ketchup
- 1 tsp soy sauce
- 1 tsp honey (optional for a sweeter taste)
- Pinch of garlic powder (optional, for extra flavor)
Equipment
- Baking sheet
- Parchment paper
- Pastry brush
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 200 degrees Celsius / 390 Fahrenheit with top and bottom heat and line a baking sheet with parchment paper.
- Heat some oil in a frying pan over medium heat. Fry the onion, bell pepper, and leek for about 5 minutes. Add the basil, onion powder, and garlic powder. Fry the vegetables until they are soft.
- Let the vegetables cool for 10 minutes.
- In a separate bowl, mix the ground chicken with the smoked paprika, chicken seasoning, salt, and pepper to taste. Add the vegetables to the chicken mixture and stir until combined.
- Roll out a sheet of puff pastry and cut it in half horizontally. Spread a quarter of the chicken mixture evenly across each piece of dough.
- Roll up the puff pastry with the filling inside and cut it into 7–8 equal pieces. Repeat with the remaining puff pastry.
- Place the bites on a baking sheet and brush the tops with beaten egg. Sprinkle with poppy or sesame seeds.
- Bake the bites in the oven for about 20 minutes, or until golden brown and crispy.
- In the meantime, optionally prepare the sauce. Simply mix all the ingredients together until well combined.
- Serve the bites warm with the dipping sauce and enjoy!
