Kletskoppen (Dutch Almond Lace Cookies)

Kletskoppen – or Dutch almond lace cookies, who doesn’t know these typical Dutch biscuits? Crispy, sweet, and addictively delicious! It’s one of my favorites. It may not look like much, but the taste… Did you know that it’s actually very easy to make yourself?

I love baking, especially on weekends. That’s why you’ll find lots of cookie recipes on my website. However, a kletskoppen recipe was still missing, which is truly scandalous. It’s a traditional Dutch cookie that’s so incredibly easy to make!

It’s one of my favorite cookies and a typical cookie that you’ll find on your grandmother’s coffee table or with a cup of hot coffee in a traditional café, deliciously sweet and crunchy.

Where does the name ‘kletskop’ come from?

Where does the name ‘kletskop’ come from? Kletskoppen used to be called ‘zere hoofden’ (sore heads). This is because the biscuits were compared to scabby heads, which are neither appetising nor attractive. They had a point because they don’t exactly win any beauty contests, but looks aren’t everything!

Eventually, the name became ‘kletskop’, which is also a nickname (or insult…) for people from Leiden, and is now the name of one of this tasty and crunchy biscuit!

Making kletskoppen

Kletskoppen are extremely easy to make and require ingredients that most people always have at home. All you need to make these Dutch biscuits is a little flour, two types of sugar, butter, cinnamon and almond shavings.

Delicious and easy crunchy cookies

They’re not difficult to make either. You just need to make the dough and roll it into balls that don’t have to be perfectly round. Kletskoppen are the most imperfectly perfect biscuits, so don’t worry 😉. Just bake and enjoy!

Kletskoppen

Ingredients

10 pieces
  • 25 gram butter
  • 50 gram sugar
  • 50 gram light brown sugar
  • pinch of salt
  • pinch of cinnamon
  • 50 gram flour
  • 25 gram almond shavings
  • a little water (if the dough is too dry.)

Equipment

  • Baking sheet
  • Parchment paper

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 200 degrees Celsius / 392 Fahrenheit with top and bottom heat.
  • Mix all the ingredients together, adding a little water if the dough is too dry.
  • Roll the dough into small balls, slightly larger than a grape.*
  • Place the balls on a baking sheet lined with parchment paper, ensuring there is enough space between them. **
  • Put the tray in the oven, reduce the temperature to 180 degrees Celsius / 356 Fahrenheit and bake for approx. 8–10 minutes until golden brown.
  • Leave to cool and enjoy!
Good to know:
*The dough is not really suitable for rolling into perfect balls, but small mounds or rough balls are fine.
**The cookies spread out a lot during baking, which is normal, so make sure there is enough space between them.
