Delicious grilled vegetables with feta cheese. This tasty vegetarian side dish is quick and easy to make. It’s quick to make and guaranteed to be a hit!

The barbecue season is officially open, right?! To be honest, I’m ready for it as soon as the first rays of sunshine appear. I love barbecuing with friends and family. I like to make a real party of it with all kinds of different dishes, and these grilled vegetables packets are my new favourite!

I absolutely love meat and fish cooked on the barbecue. But don’t underestimate the delicious flavour of grilled veggies from the barbecue either. The delicious grilled flavour really enhances the vegetables.

You can cook lots of different vegetables on the barbecue. This time, I opted for a mix of aubergine, courgette, green and red bell peppers, red onions and tomato. Mushrooms would be delicious too!

These BBQ vegetable packets are really easy to make. Simply chop the vegetables and mix them with a delicious yet simple dressing made from olive oil, balsamic vinegar and dried herbs. Then divide the vegetables between sheets of aluminium foil and wrap them up.

Make sure the packets are sealed tightly so that no steam can escape during cooking. This method is a great way of preparing a delicious side dish or vegetarian main dish.

To finish it off, I crumble some delicious feta cheese over the grilled vegetables. Mmm, so delicious! Of course, if you prefer to keep it completely plant-based, you can leave this out or replace it with vegan feta. The dressing gives the vegetables plenty of flavour!

Other tasty side dishes to serve with the barbecue:

Barbecued or oven-baked vegetables

If you don’t have a barbecue or the weather isn’t great, you can prepare these parcels in the oven instead. Bake them for about 20 minutes at 200 degrees Celsius / 392 Fahrenheit with top and bottom heat.

Ingredients

4 portions
For the packets:
  • 1 red pepper (cut into strips)
  • 1 green bell pepper (cut into strips)
  • 1 red onion (cut into half-rings)
  • 1 aubergine (cut into half-slices)
  • 1 courgette (cut into half-moon slices)
  • 200 gram cherry tomatoes
  • 100 gram feta
For the dressing:
  • 50 ml olive oil (extra virgin)
  • 2 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt and pepper to taste

Equipment

  • Aluminium foil

INSTRUCTIONS (how to make this recipe):

  • Preheat the barbecue to a medium heat.
  • Tear off pieces of aluminium foil large enough to wrap the vegetables.
  • In a small bowl, mix together the olive oil, balsamic vinegar, thyme, oregano, salt and pepper to make a dressing. Pour the dressing over the vegetables. Mix well.
  • Evenly divide the vegetables and dressing between the pieces of aluminium foil. Fold the packets tightly to ensure that no steam can escape.
  • Place the packets on the preheated barbecue and cook for about 20 minutes, or until the vegetables are tender.
  • Remove the packets from the barbecue and leave to cool slightly before opening. Crumble the feta cheese over the vegetables once opened.
  • Serve the grilled vegetable packts immediately as a side dish at your barbecue. Enjoy!
