If you’ve been following me for a while, you know I absolutely love baking my own bread. I have my own sourdough starter at home from which I often make my sourdough ciabattas, but sometimes it’s nice to make an easy and quick recipe.

With just a few ingredients, you can whip up this delicious bread in no time:

  • Flour: all-purpose flour works just fine
  • Greek yogurt: I strongly suggest you use a full-fat Greek yogurt for this recipe
  • Baking powder: to make sure it rises properly
  • Salt: mostly for flavor!

The yogurt gives it a soft, airy texture and a subtle, fresh flavor. You simply bake them in a pan, and they’re delicious warm and fresh.

It’s great that making flatbread yourself is so easy; the speed is just ideal for a tasty meal. That way, you can whip up a delicious fresh bread even on a busy weekday. This bread is absolutely delicious with curries, such as my green chicken or Thai curry. But it’s also wonderful with a good bowl of soup.

Can I use whole wheat flour?

I expect that should definitely work. However, I’ve never tried it myself, so you’d have to test the proportions.

Can I pre-make these breads?

Sure, you can store the bread (well-wrapped in plastic wrap) for 1–2 days and briefly warm it up in a dry skillet before serving.

Can I freeze them?

That works too. Make sure to let the bread thaw completely; it’s delicious if you briefly fry it in a dry skillet before serving.

Ingredients

6 pieces
  • 400 gram flour
  • 300 gram Greek yogurt
  • 2 tsp baking powder
  • 1 tsp salt

Equipment

  • Big bowl
  • Skillet

INSTRUCTIONS (how to make this recipe):

  • Mix all the ingredients thoroughly in a bowl and shape them into a ball. You can do this by hand or with a food processor.
  • Cover with a kitchen towel and let rest for 15–30 minutes.
  • Then divide the dough into 6 equal pieces and shape them into balls.
  • Roll out the balls into flatbreads.
  • Heat a skillet with (olive) oil and fry the flatbread on both sides until golden brown. When you see bubbles forming on the bread (takes about 2–3 minutes), flip the bread and fry the other side until golden brown. Repeat this with the rest of the dough.
  • Immediately after baking, wrap the flatbreads in a clean, dry tea towel so they stay nice and soft and warm. Enjoy!
