This is my version of a Thai green curry with really tasty chicken meatballs and, of course, rice and vegetables. This green curry is nicely spiced, creamy (thanks to the coconut milk) and you can add all your favourite vegetables! I chose green beans, but broccoli or cauliflower would also be delicious additions.

I love all kinds of curries; they’re so quick and easy to make and a great change from the classic meat and potatoes or pasta. I have more curry recipes up my sleeve, so stay on the lookout!

Curry is a real comfort food for me, which is why I love it so much 🙂 . Especially in the colder months, a warm plate of creamy, spicy curry is just perfect! You can also vary your curry a lot.

For example, you can make it with poultry, meat, vegetarian or even completely vegan. There are many types of curry paste for different flavours, and you can even swap the rice for jasmine rice, cauliflower rice or naan bread. But first, let’s get back to this green curry with chicken meatballs, because it’s so delicious! So get cooking 😉 …

Make a chicken curry

This Thai food recipe is all about the flavors but yet it is easy to make. Juicy chicken meatballs in a sauce made with a store-bought curry paste. We make the meatballs with the Thai green curry paste, garlic powder, coriander powder, soy sauce and spring onions. The curry is made with onion, fresh ginger, garlic, green curry paste, coconut milk, soy sauce and lemongrass. You could add some fresh cilantro or Thai basil when serving this dish.

Ingredients

4 people
  • 200 gram rice
For the chicken meatballs
  • 500 gram minced chicken
  • 3 tbsp flour
  • 1 tbsp green curry paste*
  • 2 tsp garlic powder
  • 2 tsp coriander powder
  • 2 tbsp soy sauce
  • 2 tbsp spring onions (finely chopped)
For the curry
  • 1 onion (finely chopped)
  • 2 tsp ginger (fresh, grated)
  • 2 cloves garlic (finely chopped)
  • 3-4 tbsp green curry paste*
  • 300 ml coconut milk
  • 1 tbsp soy sauce
  • 1 stalk lemongrass (crushed)
  • Salt and white pepper (to taste)

Equipment

  • Large pan
  • Large frying pan

INSTRUCTIONS (how to make this recipe):

  • Mix the chicken mince with the rest of the ingredients for the chicken meatballs. Shape into equal sized balls.
  • Cook the rice according to the instructions on the packet.
  • Heat a little oil in a large frying pan and sauté the onion, garlic and ginger.
  • Add the chicken meatballs to the pan and fry until lightly browned.
  • Add the green curry paste, coconut milk, soy sauce and lemongrass to the meatballs and simmer for 15-20 minutes.
  • Serve the curry with the meatballs and rice and add your favourite vegetables. I like the curry with green beans, cauliflower or broccoli.
Good to know:
* This is the same green curry paste used in the meatballs to flavour the minced meat and in the curry to flavour the curry.
