Thai green curry with chicken, a super easy, quick and incredibly tasty meal. Creamy green curry, tasty chicken meatballs, rice and vegetables.

Ingredients

4 people
  • 200 gram rice
For the chicken meatballs
  • 500 gram minced chicken
  • 3 tbsp flour
  • 1 tbsp green curry paste*
  • 2 tsp garlic powder
  • 2 tsp coriander powder
  • 2 tbsp soy sauce
  • 2 tbsp spring onions (finely chopped)
For the curry
  • 1 onion (finely chopped)
  • 2 tsp ginger (fresh, grated)
  • 2 cloves garlic (finely chopped)
  • 3-4 tbsp green curry paste*
  • 300 ml coconut milk
  • 1 tbsp soy sauce
  • 1 stalk lemongrass (crushed)
  • Salt and white pepper (to taste)

Equipment

  • Large pan
  • Large frying pan

INSTRUCTIONS (how to make this recipe):

  • Mix the chicken mince with the rest of the ingredients for the chicken meatballs. Shape into equal sized balls.
  • Cook the rice according to the instructions on the packet.
  • Heat a little oil in a large frying pan and sauté the onion, garlic and ginger.
  • Add the chicken meatballs to the pan and fry until lightly browned.
  • Add the green curry paste, coconut milk, soy sauce and lemongrass to the meatballs and simmer for 15-20 minutes.
  • Serve the curry with the meatballs and rice and add your favourite vegetables. I like the curry with green beans, cauliflower or broccoli.
Good to know:
* This is the same green curry paste used in the meatballs to flavour the minced meat and in the curry to flavour the curry.
