And who doesn’t love chocolate? At least I don’t know many.. The only thing I really don’t like is a dry chocolate cake, this chocolate pound cake is wonderfully creamy with a rich chocolate flavor. There is chocolate in the cake, chocolate chips in the batter and a silky smooth chocolate ganache on top.. sooo delicious!

So this chocolate cake is exactly how I like it. By the way, if you are wondering what the espresso powder is for. It’s not for the coffee flavor, as you won’t taste it in the cake, but to enhance the chocolate flavour. Try it, you will be amazed at the result! Baking a chocolate pound cake is really not that different from baking a ‘normal’ cake. The only difference is, you guessed it, the chocolate. In this case, I went wild and added chocolate both in and on the cake. I think the ganache on top of the cake gives it just that little bit extra! In the mood for more pound cake recipes? Ingredients
- 250 gram unsalted butter (room temperature)
- 200 gram sugar
- 3 eggs
- 1 tsp vanilla extract
- pinch of salt
- ½ tbsp instant espresso powder
- 100 gram Greek yoghurt
- 150 gram all purpose flour
- 75 gram cocoa powder
- 1 tsp baking powder
- 100 gram chocolate chips (dark or milk chocolate)
- 275 gram chocolate chips (dark or milk chocolate)
- 250 ml whipping cream
Equipment
- Hand mixer or food processor
- Cake tin – about 25cm / 10 inches in diameter
- Parchment paper
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 175 degrees Celsius / 350 Fahrenheit top and bottom heat. Grease and/or line the cake tin with baking paper.
- Cream the butter and sugar with a mixer for about 5-7 minutes until almost white and fluffy.
- Add the eggs one at a time. Add the vanilla extract, salt and espresso powder and mix well.
- Mix in the Greek yoghurt.
- Gradually add the flour, cocoa powder and baking powder until you have a smooth batter.
- Mix in the chocolate chips carefully.
- Bake the cake in the oven for 50-55 minutes. You can check with a skewer, if it comes out dry the cake is ready.
- Make the ganache by heating the cream. Add the chocolate, let it melt and mix.
- Spread the ganache on the cake and decorate with some chocolate chips, let the ganache set and attack!
