Ingredients

10 pieces
For the cake:
  • 250 gram unsalted butter (room temperature)
  • 200 gram sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • pinch of salt
  • ½ tbsp instant espresso powder
  • 100 gram Greek yoghurt
  • 150 gram all purpose flour
  • 75 gram cocoa powder
  • 1 tsp baking powder
  • 100 gram chocolate chips (dark or milk chocolate)
For the ganache:
  • 275 gram chocolate chips (dark or milk chocolate)
  • 250 ml whipping cream

Equipment

  • Hand mixer or food processor
  • Cake tin - about 25cm / 10 inches in diameter
  • Parchment paper

INSTRUCTIONS (how to make this recipe):

  • Preheat the oven to 175 degrees Celsius / 350 Fahrenheit top and bottom heat. Grease and/or line the cake tin with baking paper.
  • Cream the butter and sugar with a mixer for about 5-7 minutes until almost white and fluffy.
  • Add the eggs one at a time. Add the vanilla extract, salt and espresso powder and mix well.
  • Mix in the Greek yoghurt.
  • Gradually add the flour, cocoa powder and baking powder until you have a smooth batter.
  • Mix in the chocolate chips carefully.
  • Bake the cake in the oven for 50-55 minutes. You can check with a skewer, if it comes out dry the cake is ready.
  • Make the ganache by heating the cream. Add the chocolate, let it melt and mix.
  • Spread the ganache on the cake and decorate with some chocolate chips, let the ganache set and attack!
