I love pancakes and making them in different ways. I love the classic Dutch pancake, but you can do so much more. These deliciously fluffy banana pancakes are easy to whip up and very rich in flavor thanks to the gingerbread spice mix.
I made the banana pancakes in a small frying pan and baked them one after the other. This is because they cook very quickly. This recipe yields about 16 pancakes. Of course, you can also bake several pancakes at a time in a larger frying pan. Alternatively, you can bake them in a griddle if you want a fixed size. Or make one big pancake, that’s possible too!

Healthy banana pancakes recipe
There’s no added sugar in this recipe, all you can taste in these pancakes is the natural sugar from the bananas. This makes them just sweet enough and much more responsible than pancakes with added sugar. It’s also a great recipe for using up overripe bananas, aside from banana bread of course..

Golden brown and fluffy
This easy banana pancakes recipe uses eggs and baking powder, making them nice and fluffy and adding some extra protein. To add more depth and flavor to the banana pancakes, I used a gingerbread spice mix. They work really well together, but you can certainly vary the spices. Try pumpkin spice or a just a touch cinnamon or even add some chocolate chips!

Ingredients
- 3 bananas ((over)ripe)
- 6 eggs (medium)
- 100 gram all purpose flour
- ½ tsp baking powder
- 1 tsp gingerbread spice mix
- pinch of salt
- 50 gram butter
- maple syrup, fresh fruit, extra banana slices
Equipment
- Whisk
- Ice-cream scoop
- Frying pan with lid
INSTRUCTIONS (how to make this recipe):
- Place the bananas in a bowl and mash. Add the eggs and whisk.
- Add the flour, baking powder, spices and salt. Mix well.
- Heat a frying pan over medium heat and add a knob of butter.
- Take a scoop of the batter and pour it into the pan. Cover the pan and cook for about 1 minute on each side until done.
- Repeat with all the pancakes. Garnish with banana slices, possibly some (maple) syrup and fresh fruit to taste. Enjoy!
