Easy bacon-wrapped green beans

Green beans, or haricots verts as these French green beans are called, with bacon is perhaps the easiest side dish for a Christmas dinner. Fifteen minutes of preparation and then just a quick pop in the oven, et voila!

I love fresh green beans and especially green beans from the oven, as in this green bean casserole. A delicious vegetable that needs very little to be really tasty.

Different types of bacon

For these bacon wrapped green beans, you can use different kinds of bacon, such as pancetta, breakfast bacon but also an Italian ham like prosciutto can be very tasty. Use whatever you fancy or what you might already have in the house!

Make sure the slices of bacon are not cut too thick, so you can roll up the little bundles of beans easier and they will bake more evenly in the oven. Go to your local butcher, for example, so you can ask for the exact thickness you want.

Fantastic side dish 

As I said, these green beans with bacon are really ideal to prepare! How do you do it? Basically, you follow the recipe until baking in the oven. You clean the beans and pre-cook them. Then let them cool down and roll them into a strip of bacon of your choice. Keep them covered in the fridge until you finish them.

To serve, preheat the oven, place the bacon wrapped green beans in an oven dish and bake them. Tip; if you are taking them out of the fridge, bake them a little longer than the recipe says because they are cold. About 10-15 minutes in total. It’s that simple!

Personally, I would serve these green beans with bacon as a side dish at a Christmas dinner or festive meal. You can combine them with some poached pears, crispy roasted potatoes or some hearty stew like my goulash for a full festive dinner. Happy Holidays!

Ingredients

4 people
  • 200 gram green beans
  • 150 gram pancetta (or bacon or Italian ham)
  • to garnish: thyme
  • salt

Equipment

  • Large pot
  • Oven dish

INSTRUCTIONS (how to make this recipe):

  • Bring a pan of water with a pinch of salt to the boil and preheat the oven to 180 degrees Celsius / 355 Fahrenheit top and bottom heat.
  • Rinse and clean the green beans.
  • When the water boils, add the beans and cook them al dente for about 5 minutes.
  • Drain and rinse briefly with cold water.
  • Place a slice of bacon on a cutting board and place about 4-5 green beans on top and make a roll. Repeat until you have rolled all the beans in bundles.
  • Place them in an oven dish. Gather the thyme leaves on top. Place in the oven for 5 minutes. Enjoy your meal and happy holidays!
Good to know:
  • You can test whether the beans are done by piercing them with a fork. Does the fork go through easily? Then the beans are done.
  • If you want to prepare this dish ahead, you can do so until you put them in the oven.  Then extend the oven time by about 5-10 minutes until the beans are hot and the bacon is crisped up.
