- 200 gram light brown sugar
- 250 gram white sugar
- 250 gram butter (melted)
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 tsp baking soda
- 300 gram self-rising flour
- 100 gram almond flour
- 75 gram slivered almonds
Equipment
- Baking sheet
- Parchment paper
- Ice-cream scoop
INSTRUCTIONS (how to make this recipe):
- Mix the light brown caster sugar, granulated sugar and melted butter together.
- Then add the egg, egg yolk, vanilla extract and baking soda, mixing well.
- Next, mix in the self-raising flour and almond flour until you have a nice dough.
- Use an ice cream scoop to make evenly sized balls.
- Put the slivered almond flakes in a deep plate and roll the balls in them so that they are well covered with almonds.
- Place the balls in the freezer for about 30 minutes. Meanwhile, preheat the oven to 175 degrees Celsius / 345 Fahrenheit with top and bottom heat.
- Spread the balls out on a baking sheet lined with parchment paper and bake for 12–15 minutes until golden brown.
- Leave to cool for a moment, then enjoy! For decoration, you can sprinkle some icing sugar on top.
