Ingredients

20 cookies
  • 200 gram light brown sugar
  • 250 gram white sugar
  • 250 gram butter (melted)
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 300 gram self-rising flour
  • 100 gram almond flour
  • 75 gram slivered almonds

  • Parchment paper
  • Ice-cream scoop

INSTRUCTIONS (how to make this recipe):

  • Mix the light brown caster sugar, granulated sugar and melted butter together.
  • Then add the egg, egg yolk, vanilla extract and baking soda, mixing well.
  • Next, mix in the self-raising flour and almond flour until you have a nice dough.
  • Use an ice cream scoop to make evenly sized balls.
  • Put the slivered almond flakes in a deep plate and roll the balls in them so that they are well covered with almonds.
  • Place the balls in the freezer for about 30 minutes. Meanwhile, preheat the oven to 175 degrees Celsius / 345 Fahrenheit with top and bottom heat.
  • Spread the balls out on a baking sheet lined with parchment paper and bake for 12–15 minutes until golden brown.
  • Leave to cool for a moment, then enjoy! For decoration, you can sprinkle some icing sugar on top.
