  • 600 gram chicken thighs (cut into pieces)
  • 1 red onion (sliced)
  • 3 clove garlic (finely chopped)
  • 1 tsp fresh grated ginger
  • 3 tbsp sweet soy sauce (ketjap manis)
  • 2 tbsp brown sugar
  • 3 tsp sambal
  • 1 tbsp chili sauce
  • 25 gram peanut butter
  • 2 tbsp ketchup
  • 100 ml water
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • Oil, salt & pepper
To serve
  • 300 gram rice (uncooked)
  • Cucumber salad, cassava crackers, atjar, seroendeng

INSTRUCTIONS (how to make this recipe):

  • Heat some oil in a pan and brown the chicken on all sides.
  • Add the onion, garlic, and ginger and sauté briefly until fragrant.
  • Add the sweet soy sauce, brown sugar, sambal, chili sauce, peanut butter, and ketchup. Stir well, then add the water and let it simmer gently for about 5 minutes.
