Homemade gözleme
This easy recipe for homemade gözleme is definitely a must try! I filled mine with potato, spinach and feta. A classic that I personally find incredibly tasty. But you can also get them filled with minced meat, potatoes, parsley and much more. I still need to get better at rolling out my dough very, very thinly, so don’t worry: it is still delicious when they are a bit thicker!
This recipe is based on a wonderful recipe by Hale Amus and her Dutch cookbook ‘De bijbel van de Turkse keuken’ – ‘The Bible of the Turkish cuisine’.

Spinach and feta stuffed flatbread
It is a very populair Turkish streetfood that is very addicting and super easy to make. The dough is pretty simple and the filling is also not very difficult to make. Stuffed flatbread with pure and fresh flavors, like you would expect from Turkish food!

Ingredients
- 325 gram all purpose flour (+ extra)
- 100 ml milk (lukewarm)
- 1 tbsp olive oil
- ½ tsp salt
- 100 ml water (lukewarm)
- 450 gram potatoes (peeled and boiled)
- 2 tbsp olive oil
- 1 tbsp tomato puree
- salt and pepper to taste
- 75 gram fresh spinach (finely chopped)
- 100 gram feta cheese (crumbled)
- 1 tbsp extra virgin olive oil
- neutral oil for grilling
Equipment
- Fine sieve
- Rolling Pin
- Basting brush
- Frying pan
INSTRUCTIONS (how to make this recipe):
Making the dough:
- Sift the flour into a large bowl. Add the milk, olive oil, salt and water.
- Knead the dough for about 5 minutes until it comes together.
- Cover the dough with a clean, damp tea towel and leave to rest for 30 minutes.
Make the potato filling:
- Mash the boiled potatoes with a fork.
- Heat the olive oil in a frying pan, add the tomato puree and fry for 1 minute.
- Add the potatoes to the tomato puree and season with salt and pepper.
- Continue to mash the mixture with a spoon while stirring, then remove from the heat.
Make the spinach filling:
- Mix the spinach and olive oil in a large bowl and knead for about 1 minute.
- Stir the feta into the spinach and set aside.
Make the gözleme:
- Divide the dough into 5 equal portions.
- Dust your work surface with flour and roll out each portion as thinly as possible into a 35-40 cm / 15 inch circle.
- Fold the top and bottom of the circle inwards.
- Spread 2 to 3 tablespoons of the potato and spinach filling in the center.
- Fold one side first, then the other, overlapping to make a nice little envelope and repeat.
- Heat the oil in a frying pan and cook the gözleme for 1.5-2 minutes on each side until cooked and golden brown. Brush with extra oil during cooking if necessary. Enjoy!
