Homemade Crispy Egg Rolls
Can you really make crispy egg rolls in an air fryer? That’s exactly what I wondered when I first decided to try it. Would they still get that deliciously crunchy exterior without being deep-fried?
Well, I tested it for you, and the answer is a big yes! These homemade air fryer spring rolls turn out beautifully golden and crispy. Of course, they’re not exactly the same as traditional deep-fried spring rolls, but I’m absolutely thrilled with the results!

Recipe Ingredients
This recipe is inspired by Vietnamese style spring rolls, with a delicious combination of chicken, vegetables and glass noodles wrapped in a thin, crispy wrapper.
The filling is similar to my regular chicken spring rolls but made in the air fryer.
- chicken – I use finely chopped chicken breast, but you can also use ground chicken if you prefer
- glass noodles – these add a delicious texture to the egg rolls and absorb the flavor of the filling
- carrots and leeks – these add sweetness, flavor and a bit of crunch
- bean sprouts – I love adding these at the end so they retain some of the crispness
- ginger – freshly grated ginger gives lots of flavor
- kecap manis – this Indonesian sweet soy sauce is delicious to add

Tips for Making the Best Crispy Egg Rolls
Making crispy egg rolls in the air fryer is surprisingly easy, but a few simple tricks will help you get the best results.
Let the filling cool
Before assembling the air fryer spring rolls, make sure the filling has cooled. A hot or overly wet filling can make the wrappers soggy, which makes them harder to roll and less crispy after cooking.
Don’t overfill the wrappers
I recommend using about 1 to 2 tablespoons of filling per wrapper, depending on the size. If you add too much filling, the egg rolls can be difficult to seal and may burst open during cooking.
Brush lightly with oil
One of the secrets to making crispy air fryer egg rolls is brushing the outside of each roll with a thin layer of vegetable oil. You don’t need much, but it helps the wrappers turn golden brown and crunchy.
Don’t overcrowd the air fryer
Arrange the egg rolls in a single layer with a little space between them. The hot air needs to circulate around each roll for even cooking. Depending on the size of your air fryer, you may need to cook them in batches.

FAQ Air Fryer Crispy Egg Rolls
How do you make egg rolls crispy in the air fryer?
For the crispiest result, lightly brush the wrappers with vegetable oil and arrange the spring rolls in a single layer in the air fryer basket. Avoid overcrowding and turn them halfway through cooking so they brown evenly.
What temperature should I cook air fryer egg rolls at?
I recommend cooking homemade air fryer spring rolls at 350ËšF/180ËšC for approximately 10 to 12 minutes. The exact cooking time depends on the size of your egg rolls and your air fryer model. Always check half way!
Can I make crispy egg rolls ahead of time?
Yes, you can prepare the filling up to 2 days in advance and store it in an airtight container in the refrigerator. Assemble the egg rolls when you’re ready to cook them, or freeze the assembled rolls for later.
Can I reheat leftover egg rolls in the air fryer?
Definitely! The air fryer is one of the best ways to bring back that crispy texture. Reheat the egg rolls at 350ËšF/180ËšC for about 3 to 5 minutes or until heated through. For food safety, leftovers should reach an internal temperature of 165ËšF/74ËšC.

Ingredients
- 20 thin spring roll wrappers (fresh or thawed)
- 50 gram glass noodles
- 1 tsp freshly grated ginger
- 100 gram grated carrots
- 300 gram chicken breast (finely chopped, or ground chicken)
- 1 stock cube (crumbled)
- 75 gram leeks (thinly sliced)
- 1½ tbsp kecap manis (Indonesian sweet soy sauce)
- 75 gram bean sprouts
- 1 tbsp all-purpose flour
- Freshly ground black pepper (to taste)
- Vegetable oil (as needed)
- Water (for sealing)
Equipment
- Air fryer
INSTRUCTIONS (how to make this recipe):
- Thaw the wrappers if necessary. If you're using fresh refrigerated wrappers, you can skip this step.
- Place the glass noodles in a bowl of warm water and let them soak for approximately 5 minutes. Drain well and cut into shorter pieces using a sharp knife or kitchen scissors.
- Heat a little vegetable oil in a wok over medium heat. Add the grated ginger and sauté briefly until fragrant. Add the grated carrots and cook for a few minutes until they begin to soften.
- Add the finely chopped or ground chicken, crumbled bouillon cube, and black pepper to taste. Stir-fry until the chicken is fully cooked.
- Add the sliced leeks and cook briefly. Stir in the ketjap manis and season with additional black pepper if needed.
- Stir the glass noodles and bean sprouts into the chicken mixture. The bean sprouts should retain a little crunch. Remove the wok from the heat and allow the filling to cool.
- Mix the flour with a little water until you have a thick, glue-like paste.
- Place one wrapper on a clean work surface with a corner pointing toward you. Add approximately 1–2 tablespoons of filling near the bottom corner.
- Fold the bottom corner over the filling and roll halfway up. Fold both sides inward, then continue rolling tightly. Brush a little flour paste onto the final corner to seal. Repeat with the remaining wrappers and filling.
- Cover unused wrappers with plastic wrap while assembling the egg rolls to prevent them from drying out.
- Lightly brush the egg rolls with vegetable oil. Arrange them in a single layer in the air fryer basket and cook at 350°F (180°C) for approximately 10-12 minutes, turning halfway through, until golden brown and crispy. Work in batches if necessary.
- Enjoy your homemade crispy egg rolls while they're hot, preferably with sweet chili sauce!
