This chicken salad appetizer is the perfect budget proof appetizer to serve at Christmas! This is the perfect way to get you through the winter in a delicious and responsible way! Other great options for your Christmas dinner are my carpaccio appetizer or my creamy, festive mushroom soup.

Chicken salad appetizer recipe

The idea for this chicken salad appetizer is based on my favorite chicken salad recipe made with simple ingredients. I like to use smoked grilled chicken, you can buy this pre-made, but you can also roast your own chicken or use leftover chicken. It also contains apple, cucumber, avocado and is served on a bed of greens.

I like to season this creamy chicken salad with salt, pepper, sweet paprika and crème fraîche. And I like to add a bit of smokey mayonaise (just mix a bit of mayonaise with barbecue sauce) or even sriracha mayonaise for a a little bit of spice. This homemade chicken salad is super simple and really tasty, let’s get cooking!

Ingredients

4 people
  • 200 gram smoked roasted chicken (or roasted / leftover chicken)
  • ½ apple
  • 1 avocado
  • â…“ cucumber
  • ½ tbsp lemon juice
  • 2 tbsp crème fraîche
  • 1 tbsp smokey mayonaise (or sriracha mayonaise)
  • 1 tsp sweet paprika powder
  • salt and pepper to taste
  • 75 gram arugula

Equipment

  • Large bowl
  • Glasses for serving

INSTRUCTIONS (how to make this recipe):

  • Dice the chicken, apple, avocado and cucumber and place in a large bowl.
  • Add the lemon juice, crème fraîche, mayonaise, paprika and salt and pepper to taste. Mix together.
  • Divide a small amount of arugula between jars or glasses and fill them alternately with a spoonful of the chicken salad and arugula. Merry Christmas!
