Summer chicken pasta salad
This summer dish is incredibly easy to make and absolutely delicious. It’s a great option for an evening meal, but it’s also perfect for lunch. Despite being a hearty pasta salad with chicken, it’s still a light meal. It’s ideal for warm summer days and I bet the whole family will enjoy it.

Cold pasta salad with chicken
For this recipe, you can use either smoked or grilled chicken. For example, you could use grilled chicken from the oven, or use up leftovers from a whole chicken you’ve cooked on the BBQ. These leftovers are great for this salad. However, smoked chicken breast or a rotisserie chicken is also very tasty and easy to prepare!
Caesar pasta salad
This pasta salad is inspired by my regular Caesar salad. You can use the same homemade dressing for this salad if you want to make it yourself. However, using a tasty ready-made shop-bought dressing is also fine if you’re looking for a quick option.

Summer pasta salad with chicken
This pasta salad is generously filled with boiled eggs, crispy bacon, fresh lamb’s lettuce, cucumber, Parmesan cheese and croutons. Although you can buy croutons at the shop, I think homemade croutons are always the best.
Pasta salad with smoked chicken

Ingredients
- 100 gram bacon
- 150 gram pasta (of your choice)
- 2 tbsp Caesar salad dressing
- 75 gram lamb’s lettuce
- 1 cucumber (cut into small pieces)
- 2 pieces of smoked chicken breast (sliced)
- 4 eggs (hard-boiled – quartered)
- croutons
- optional: Parmesan cheese for garnish
Equipment
- Baking sheet
- Large pan
INSTRUCTIONS (how to make this recipe):
- Preheat the oven to 200 degrees Celsius / 392 Fahrenheit with the top and bottom heat.
- Place the bacon on a baking sheet with a good non-stick coating and bake for approximately 15–20 minutes until crispy. Leave to drain on baking paper, then crumble or cut into pieces.
- Meanwhile, cook the pasta al dente according to the instructions on the packet. Rinse immediately with cold water to stop the cooking process.
- Mix the Caesar salad dressing into the pasta.
- Divide the lettuce between deep plates and top with pasta, cucumber, chicken, egg and Parmesan cheese and croutons, if desired. Enjoy!
