Beef Stroganoff

Ingredients

4 people
  • 500 gram chuck roast (diced)
  • 1 red onion (chopped)
  • 2 clove garlic (finely chopped)
  • 400 gram chestnut mushrooms (sliced)
  • 2 tbsp flour
  • 250 ml beef stock
  • 70 gram tomato purée
  • 2 tbsp Dijon mustard
  • 150 ml sour cream
  • 100 ml cooking cream
  • Olive oil, salt and pepper
  • Fresh parsley (to garnish)

INSTRUCTIONS (how to make this recipe):

  • Heat some olive oil in a pan over medium heat. Brown the chuck roast on all sides. Remove them from the pan and set aside.
  • Add more oil if necessary, then fry the onion and garlic until soft. Add the mushrooms and fry until browned.
  • Sprinkle the flour over the mushroom mixture and stir well.
  • Slowly pour in the beef stock, stirring constantly to prevent lumps forming.
  • Then add the tomato purée, mustard, sour cream and double cream. Stir until the sauce thickens.
  • Season to taste with salt and pepper. Add the browned beef to the sauce and simmer for a further 1.5–2 hours on a low heat.
  • Meanwhile, cook the rice.
  • Serve the beef stroganoff with rice, garnished with fresh parsley if desired. Enjoy your meal!
